Curried Chickpea and Mango Salad Wraps




I love the free magazine that you can pick up in the natural foods section of Loblaws called "Sage".  It always has interesting articles and recipes that inspire me!  This recipe came from January's edition and it is fantastic - quick to assemble, tasty and a great source of protein!!!

CURRIED CHICKPEA AND MANGO SALAD WRAPS
Ingredients:
2 tbsp plain yogurt (I used goat yogurt)
1 tbsp mayonnaise
1 tbsp rice vinegar
Juice from 1 lime
1 tsp honey
2 1/2 tsp yellow curry powder
Pinch of cayenne pepper
Pinch of salt
1/3 cup diced red onion
2 green onions, green and white parts sliced
1 cup diced mango
1-15oz can of chickpeas, drained and rinsed
4 soft tortilla shells
1 cup baby spinach, washed and dried
  • In a medium sized mixing bowl, combine: yogurt, mayonnaise, rice vinegar, lime juice, honey, curry powder, cayenne, and salt.
  • Add red onions, green onion, mango and chickpeas; stir to combine.
  • Split mixture among 4 tortillas and top each with spinach.  Fold in sides and roll up tightly; cut each in half and serve.
  • ENJOY!
*If you are planning to pack this for lunch, simply keep the chickpeas in a container with the baby spinach and take along a tortilla separately.  Assemble right before eating to avoid a soggy tortilla!!
**If you don't have chickpeas, this recipe works just as well with diced cooked chicken or firm tofu.

Spicy Asian Noodles with Chicken

We had decided to go out and have dinner at a local Vietnamese restaurant we all enjoy, but the snow was falling heavily and we chose to have dinner at home instead.  I searched the fridge and pantry and whipped up this delicious and quick dinner which was delicious and MUCH cheaper than going to a restaurant!!!

SPICY ASIAN NOODLES WITH CHICKEN
Ingredients:
1 tbsp sesame oil
1 tbsp grated fresh ginger
2 garlic cloves, minced
2 cups chopped cooked skinless, boneless chicken breasts
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
3 tbsp low-sodium soy sauce
2 tbsp rice vinegar
2 tbsp hoisin sauce
2 tsp sambal oelek
150g package rice vermicelli noodles
2 tbsp chopped cashews (or peanuts)
  • Heat sesame oil in a skillet over medium high heat.  Add ginger and garlic to the pan and stir constantly for less than a minute.   
  • Mix soy sauce, rice vinegar, hoisin sauce, and sambal oelek together in a small bowl.  Stir into skillet with chicken and green onions.  Saute for a minute.  Remove and place into large serving dish.
  • Meanwhile, cook noodles according to package directions.  Drain and rinse under cold water.  Add noodles to chicken and toss well to combine.  Sprinkle with cilantro and cashews.
  • Serve and ENJOY!

Twice Baked Cheddar Potato Casserole

I found this recipe in "Taste of Home" magazine and had to give it a try as with the cooler temperatures, it is the perfect rib-sticking side dish!  Not only did my family enjoy this casserole, but we loved nibbling on the potato skins sprinkled with pink Himalayan salt!!!

TWICE BAKED CHEDDAR POTATO CASSEROLE
Ingredients:
8 medium baking potatoes
1/2 cup butter, cubed
2/3 cup sour cream
2/3 cup 2% milk
1 tsp salt
3/4 tsp pepper
10 bacon strips, cooked and crumbled, divided
2 cups shredded cheddar cheese, divided
4 green onions, chopped, divided
  • Preheat oven to 425F.  Scrub potatoes; pierce several times with a fork. Bake 45-60 minutes or until tender.  Remove from oven; reduce heat to 350F.
  • When potatoes are cool enough to handle, cut each potato lengthwise in half.  Scoop our pulp and place in a large bowl; discard shells.  Mash pulp with butter, stir in sour cream, milk, salt and pepper.
  • Reserve 1/4 cup crumbled bacon for topping.  Gently fold remaining bacon, 1 cup cheese and half of the green onions into potato mixture - do not over mix!
  • Transfer mixture to a greased 11" x 7" baking dish.  Top with the remaining cheese and green onions.  Sprinkle with reserved bacon.  Bake 15 to 20 minutes or until heated through and cheese is melted.
  • ENJOY!

White Fish Cakes with Lemon-Chili Mayo



This photo really doesn't do this dish justice - when I make these again (because I absolutely will!), I will take a better quality shot.  These are not only easy and economical but extremely healthy.  I made this recipe gluten-free by using rice bread crumbs instead of regular breadcrumbs.  Thank you "Canadian Living" magazine for yet another winner!

WHITE FISH CAKES WITH LEMON-CHILI MAYO
Ingredients:
1 rib celery, coarsely chopped
2 green onions, coarsely chopped
1/4 cup fresh parsley leaves
450g firm white-fleshed fish fillets (such as halibut or basa), coarsely chopped
3/4 cup fresh bread crumbs.
1 egg
2 tsp Dijon mustard
1/4 tsp pepper
1 tbsp oil (I used coconut)
Lemon-Chili Mayo
1/3 cup light mayonnaise
1 1/2 tsp lemon juice
1/4 tsp chili powder
  • In a food processor, pulse together celery, green onions, and parsley until finely chopped.  Scrape into a bowl.
  • Add fish to the food processor; pulse until fine but not pureed.  Add to the parsley mixture and stir in bread crumbs, egg, mustard and pepper.
  • Divide into 8 portions and make each portion a 1/2" (1cm) thick patty.
  • In a nonstick skillet, heat oil over medium heat.  Cook fishcakes turning once, until golden and firm to the touch (aprox. 8 to 10 minutes)
  • Meanwhile, whisk together mayonnaise, lemon juice and chili powder.  
  • Serve fishcakes with a side of mayo and ENJOY!
*Coat the fishcakes in 1/3 cup medium or fine ground cornmeal.  Cook as directed for a crispy cornmeal version!

Loaded Baked Potato and Hot Wings Casserole

I saw this recipe on Facebook and kept it so I could try it one day...well that day came this week and BOY am I glad I made this!!!!  We all loved it but it was a bit spicy for the kids without Caesar dressing.  Once they added that, they ate it up!

LOADED BAKED POTATO & HOT WINGS CASSEROLE
Ingredients:
2lbs chicken breasts cut into 1" cubes
8 to 10 medium sized potatoes, peeled and diced into 1/2" cubes
1/3 cup of EVOO
1 1/2 tsp salt
1 tbsp black pepper
1 tbsp paprika
2 tbsp garlic powder
6 tbsp hot sauce
TOPPING:
2 cups grated cheese (I used goat marbled Cheddar)
1 cup crumbled bacon
1 cup diced green onions (I used leeks as that's what we got in our CSA, and lightly sauteed them!)
  • Preheat oven to 500F.  Spray a 9x13 baking dish with cooking spray.
  • In a large bowl, combine the extra virgin olive oil to hot sauce and mix well.  Add the diced potatoes and toss to coat.  Carefully remove the potatoes trying to retain as much sauce as possible.
  • Place potatoes in prepared baking dish and put into the oven for 45 to 50 minutes.  Stir every 10 to 15 minutes to ensure even baking and crispy potatoes.
  • Add diced chicken to the sauce and toss to coat well.  In a small bowl combine the ingredients for the topping.
  • Remove the baking dish from the oven and lower the heat to 400F.  Place the diced chicken directly on top of the potatoes and sprinkle the toppings over the entire dish.
  • Return to the oven for another 15 to 20 minutes (or until the cheese is melted and the chicken is cooked through.
  • Remove and serve with additional hot sauce and/or Caesar salad dressing.
  • ENJOY!!!

Zucchini & Cheddar Fritters

I found this recipe in 2010 Chatelaine magazine and kept it for zucchini season.  Since we were making chicken schnitzel last night, it seemed the proper time to debut this dish - and we are all glad that I did!!!!  They disappeared in seconds flat!

ZUCCHINI & CHEDDAR FRITTERS
Ingredients
2 small zucchini
1/4 cup cornstarch
1 1/2 cups grated cheddar (I used goat cheddar)
2 green onions, thinly sliced (I used my garlic scape and spinach pesto)
1 egg white
SAUCE (Optional)*
1 lemon
1/4 cup mayonnaise
1 tsp Dijon mustard (preferably grainy)
  • Preheat oven to 400F.  Do not peel zucchini.  Coarsely grate.  Spread out over paper towels and top with more paper towel.  Press to remove excess water.  Turn into a large bowl.
  • Sprinkle the zucchini with cornstarch and mix well.  Add cheese and onions.  Stir to mix.  Whisk egg white, and stir into zucchini mixture along with generous pinches of salt and black pepper.
  • Line a rimmed baking sheet with parchment paper.  Scoop approximately 1/4 cup of the mixture onto the baking sheet, and gently press down to flatten.  Repeat with remaining mixture.
  • Bake on the centre rack in the oven until fritters start to firm up and are golden on the bottom (approx. 15 to 20 mins).  Turn over the fritters carefully at this stage as they are still soft.  Continue to bake until set and golden brown (a further 8 to 10 mins).  Let stand a couple of mins before serving so the fritters will firm up.
  • Meanwhile, squeeze 1 tbsp juice from the lemon into a small bowl.  Stir in mayonnaise and mustard.  Serve fritters with the sauce.
  • ENJOY!
*I didn't bother making the sauce and the fritters were quite delicious as they are!

Chicken Provencal & Stuffed Italian Baked Potatoes

I received some coupons for "Aylmer's Tomatoes" and these recipes were attached to them...tried them tonight and both were DELICIOUS!!!!

CHICKEN PROVENCAL & STUFFED ITALIAN BAKED POTATOES
Ingredients:
CHICKEN
1 1/2 kg chicken pieces (or cut-up a whole chicken like I did)
2 tbsp melted butter
1 tsp Herbs de Provence
Sauce:
1 tbsp olive oil
2 cloves garlic, minced
1 green onion, finely diced
1/3 cup dry white wine
2 cans (540 mL each) of stewed tomatoes (I used Aylmer's Garlic and Olive Oil flavour!)   
  • Wash and dry chicken pieces, place in one layer in a large casserole dish or baking pan.  Season with salt and pepper.  Combine butter and herbs and brush over chicken.  Roast uncovered in a 400F oven for 35 minutes.
  • Saute garlic and onion in olive oil in butter for 1 minute in a medium-sized skillet over medium high heat.  Add wine and tomatoes and bring to a boil.  Reduce heat and simmer uncovered until liquid reduces and sauce thickens.
  • Remove chicken from oven and place on a platter.  Spoon sauce over top of chicken pieces and ENJOY!
Ingredients:
POTATOES
4 large baking potatoes, scrubbed
350g of lean ground beef, chicken or turkey
1 medium onion, chopped
2 cloves garlic, minced
1 can Aylmer's Accent Italian Stewed Tomatoes
1 medium zucchini, finely diced
1/2 cup shredded mozzarella cheese (I used goat mozzarella!)
  • Pierce potatoes with a fork and microwave for 12 minutes or until potatoes are baked right through.  Wrap in foil to keep warm and set aside.
  • Brown meat with onion and garlic in a large skillet over medium high heat.  Stir in tomatoes and zucchini.  Bring to a boil, reduce heat, and simmer for 10 minutes over medium heat.
  • Slice potatoes in half, lightly mash centres and top with tomato mixture.  Sprinkle with cheese and serve immediately.
  • ENJOY!

Broccoli Craisin Salad

Our Summer/Fall CSA boxes are in full swing with all the wonderful weather we've been receiving.  This week we got a box brimming with spring onions, broccoli, basil, zucchini and more!  Since I had purchased broccoli (as I didn't expect it to appear in the box for a few weeks, but with the warmer weather it ripened sooner!) I decided that dinner tonight was going to feature a broccoli salad.  I'm fortunate that my children enjoy broccoli and moreso because it came straight from the Cooper's!!!  This is a breeze to put together and so colourful and delicious you might make it a regular part of your family's dinners!!!

BROCCOLI CRAISIN SALAD
Ingredients:
4 cups broccoli florets
1 cup chopped red peppers
1 cup diced carrots
1 cup Craisins
1/2 cup raw, unsalted sunflower seeds
4 spring onions, diced
1 cup mayonnaise
1/4 cup seasoned rice vinegar
2 tbsp dark agave syrup
  • In a large serving bowl, combine the first six ingredients.
  • In a small mixing bowl, whisk together the mayonnaise, vinegar and agave syrup until well combined.  Pour over the vegetables and toss to coat.
  • Cover and refrigerate for at least 1 hour prior to serving.

Quick Vietnamese - Style Chicken Pho

My husband, kids and I have been into the spicy Vietnamese soups (pho) lately in a BIG way.  I am suffering with a lousy head cold today so I thought a chicken pho was in order for dinner tonight!  This is super simple and while you can go more elaborate and make your own stock, using a low-sodium chicken stock is perfectly acceptable.  I had chicken thighs which Greg browned for me and then I thinly sliced, and I had my own stock in the fridge already...this made the pho really quick to make!

QUICK VIETNAMESE-STYLE CHICKEN PHO
Ingredients:
2 cups of thinly sliced, cooked chicken
8 cups chicken stock
1/2 white onion, thinly sliced
1/2 - 3/4 tsp Chinese 5 Spice powder
2 tbsp fish sauce
2 tbsp sugar (I used 1 tbsp agave syrup)
Thinly sliced shiitake or porcini mushrooms (optional)
1/2 lb dried rice noodles
 1/2 cup of chopped, fresh cilantro
4 green onions, thinly sliced
1 lime, cut into wedges 
Either sliced red chilies, or sambal oelek sauce
  • Heat the stock in a large pot on medium low heat.  Add the chicken, onion, 5 spice powder, fish sauce and sugar.  If adding the mushrooms, add now.
  • Once the stock is simmering, add the rice noodles and stir well.
  • Serve the stock in a bowl, and top with cilantro, green onions, chilies, and lime wedge squeezed.
  • ENJOY!

Feta Artichoke Bites

Yet another easy, economical and tasty appetizer that I made for our annual Xmas Open House and upon looking through my draft file, realized that it didn't get published?!

FETA ARTICHOKE BITES
Ingredients:
1 jar (7 1/2 oz) marinated artichoke hearts
1 cup diced seeded tomatoes
1 cup crumbled feta cheese
1/3 cup grated Parmesan cheese
2 green onions, thinly sliced
1 baguette
  • Drain artichokes, reserving 2 tbsp marinade.  Chop artichokes and place in a large bowl.  Stir in the tomatoes, cheeses, onions and reserved marinade.  Cover and refrigerate for 1 hour.
  • Cut baguette into 1/2" slices.  Spread with artichoke mixture.  Place on an ungreased baking sheet.  Broil 4 to 6" from the heat for 4 - 5 minutes or until edges of bread are browned.  
  • Serve immediately.

Refreshing Lentil Salad

My friend Michelle had me over for lunch the other day and she served this amazing lentil salad with the Mediterranean Squares from this blog ~ what an amazing combination!!!  I have made lentil salads over the years and I loved this one so much that I demanded she email me the recipe ASAP!!  It is not only easy and contains items you will likely already have in your kitchen, but since it is a heartier legume salad, you can make it and then have some for lunch or dinner (or both!) over the next three days without it getting wilted or losing its flavour.

REFRESHING LENTIL SALAD
Ingredients:
2 plum tomatoes seeded and diced
2 oranges peeled and cut into segments
1/2 cup chopped green onions
1 (19oz) can of lentils, drained and rinsed
1/4 cup chopped fresh cilantro (or parsley)
3 tbsp coarsely chopped dried cranberries
1/3 cup freshly squeezed lemon juice
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup toasted slivered almonds
  • Combine all ingredients in a serving bowl until well combined.

Chicken Noodle Soup with Lemongrass

I wanted to add a bit of an exotic flavour to my regular chicken noodle soup as the kids absolutely love it, but my palette was growing weary of the same old recipe.  Everyone loved it (although Devon told me that I am not allowed to stop making plain old chicken noodle soup! LOL!)  This reminds me of a Thai or Vietnamese-style soup (or pho as it is called in Vietnam)!  Hope you enjoy the medley of flavours while getting the goodness of homemade chicken soup!!!

CHICKEN NOODLE SOUP WITH LEMONGRASS
Ingredients:
2 1/2 tbsp coconut or grapeseed oil
2 small boneless, skinless chicken breast halves, butterflied*
Salt and freshly ground black pepper
3 medium shallots, peeled and thinly sliced into rings
2 stalks of lemongrass, trimmed, outer layers discarded, halved lengthwise and bruised with the back of a chef's knife
1 tbsp minced fresh ginger (I use my rasp)
2 tsp packed light brown sugar (I used maple syrup)
5 1/2 cups homemade or low sodium chicken broth
1 1/2 cups stemmed and quartered shiitake mushrooms
9 oz fresh udon noodles (these are made of wheat so substitute rice noodles if necessary)
1 small Serrano chili pepper finely diced
8 large fresh basil leaves, torn (either Thai or Italian basil)
1 lime, half juiced and half cut into wedges
1 tbsp soy sauce (or gluten free Bragg's)
2 green onions, finely sliced
1 carrot, grated (for garnish)
1/2 cup fresh cilantro leaves (garnish)
  • Heat 1 1/2 tbsp of oil in a large Dutch oven or stock pot, over medium high heat, until hot (the oil shimmers when ready).  Season the chicken with 1/2 tsp each of salt and pepper, and saute until both sides are evenly browned and almost entirely cooked through.  Transfer to a cutting board and allow to cool.
  • Add the remaining 1 tbsp oil to the pot with the shallots and sprinkle with 1/4 tsp salt.  Reduce heat to medium and saute until they start to become translucent (approx. 2 minutes).  Add the bruised lemongrass, ginger, and brown sugar and stir constantly until the ginger becomes fragrant and lemongrass sizzles (1 minute).  
  • Add chicken broth and scrape up any browned pieces off of the bottom of the pot.  Bring to a boil and them reduce to simmer.  Add the mushrooms and simmer for 5 to 7 minutes.
  • Meanwhile, bring a medium-sized pot of water a boil and cook the noodles until al dente (still a little undercooked in the centre).  Drain and run under cool water to stop the cooking process.  Leave to drain well.
  • Either finely sliver or shred the chicken breasts.  Add the chicken and noodles to the broth and cook for a further 3 to 4 minutes.  Discard the lemongrass.  Stir in the chilies, basil, lime juice and soy sauce.
  • Portion between 4 large warmed soup bowls.  Garnish each with shredded carrot, green onions, and cilantro.  Serve with a lime wedge for squeezing.
  • ENJOY!

Better Than Take-Out Lemon Chicken!

In a quest to find something fast, easy and tasty to create for our busy Thursday nights, I found this recipe in amongst my pile of recipes torn from magazines.  Served with basmati rice and steamed broccoli, it makes a complete and VERY tasty meal!!!
BETTER THAN TAKE-OUT LEMON CHICKEN
Ingredients
  1 1/2 pounds chicken breast or chicken tenders, cut into chunks
1/4 cup all-purpose unbleached flour*
1/4 tsp garlic powder
Pinch ground ginger
1/4 tsp coarse salt
1 tbsp sesame oil
1 tbsp coconut oil
1 tbsp rice wine vinegar
1/2 cup chicken broth or stock
8 ounces (1 cup) prepared lemon curd**
1/4 cup hot water
1 lemon, zested
2 green onions, thinly sliced

  • Coat the chicken cubes lightly in flour, seasoned with a little salt, the garlic powder and ginger. 
  • Heat a large skillet or a wok-shaped nonstick pan over high heat. Stir fry chicken until golden in the oils for 3 or 4 minutes. Remove chicken from the pan and return pan to heat. Reduce heat to medium.
  • Add a splash of vinegar to the pan and let it evaporate. Add stock or broth to the pan and scrape up any drippings with a whisk. 
  • Thin curd by stirring in a little hot water. Add curd to broth and whisk to combine. 
  • Add chicken back to the pan and simmer for 1 to 2 minutes to thicken sauce and finish cooking chicken pieces through. 
  • Remove the pan from heat, add the green onions and zest, and toss chicken pieces well to combine zest and green onions evenly throughout the sauce. 

*Since we don't eat wheat flour, I dusted the chicken in brown rice flour which made them really crispy!
**Lemon curd can be found in the jam and jelly aisle in your local grocery store.

    Twice Baked Potatoes

    For Christmas dinner I made a roast beef dinner with carrots and onions cooked in the slow cooker http://thestimpsonsoupkitchen.blogspot.com/2010/11/slow-cooker-roast-beef-with-carrots.htmlwith the beef, my braised red cabbage http://thestimpsonsoupkitchen.blogspot.com/2009/10/braised-red-cabbage.html, and these twice baked potatoes.  Traditionally these potatoes are very high in calories and quite rich.  Since neither India nor Greg eat cow's milk products, and nobody needs the extra calories, I lightened them up by using goat yogurt!  The result was delicious and unfortunately I didn't think to take a photo before we devoured them, so I have used a photo that I found online to give you an idea of what they looked like!
    TWICE BAKED POTATOES
    Ingredients:
     4 large baking potatoes
    1 cup plain goat yogurt (or Greek-style yogurt)
    1/2 cup milk*
    1/2 tsp salt
    1/2 tsp pepper
    8 green onions, thinly sliced
    8 rashers of bacon, cooked and crumbled
    1 cup grated Cheddar cheese
    • Preheat oven to 450F.  Using a fork, prick the skin on one side of each potato.  Place the potatoes on the top oven rack, and bake for 1 hour.
    •  Remove from oven and cut each potato in half, lengthwise.  Using a spoon (I use a grapefruit spoon as it has small serrations along the edge, and makes this job much easier!), scoop out the inside flesh of each potato half, ensuring that you leave a 1 cm border of unscooped potato so the skin doesn't collapse.
    • Place the potato flesh into a large mixing bowl and coarsely mash with a potato masher.  Add the green onions, goat yogurt, milk, salt and pepper.  Stir till well combined.
    • Stuff each potato skin half with the mashed potato and place on a rimmed baking sheet. 
    • Top each potato with the crumbled bacon and grated cheese**, and place back into the oven to bake for another 15 minutes, or until the tops are browned and the cheese melted.
    • Serve & ENJOY!
    *I replaced regular 2% milk with almond milk.
    **Since my Dad is a vegetarian and Greg and India don't eat cow's milk, I left off the bacon and cheese and simply placed them in bowls for people to add to their potato as they wished!

    Hot and Sour Soup with Bean Sprouts

    I was feeling like I was coming down with a cold today, so I decided some healthy hot and sour soup would be perfect.  Having never made it before I headed out to the local grocery store and picked up the ingredients (as I live in a smaller rural community I didn't expect to find everything, but surprisingly I did!)  The complex flavours of this soup epitomize Chinese cooking as they include spice, sweet, sour and savoury...absolutely delicious, easy and I must say, I am feeling tons better after eating a bowlful!!!
    HOT AND SOUR SOUP WITH BEAN SPROUTS
    Ingredients:
    1 cup thinly sliced shiitake mushrooms (I bought a pre-sliced package)
    1/2 cup enoki mushrooms***
    1/2 cup finely sliced bamboo shoots
    4 cups miso stock (I bought cubes as there wasn't miso paste available at the store, but you can also use a chicken stock, the soup will just appear lighter in colour)
    1/2 package of firm tofu, finely diced
    1 tbsp soy sauce
    1/2 tsp granulated sugar
    1 tsp white pepper
    1 tsp salt
    2 tbsp seasoned rice vinegar
    2 tbsp cornstarch
    3 tbsp water
    1 tsp sesame oil
    1 egg, beaten
    2 green onions thinly sliced
    1 large handful of bean sprouts
    • Place the bamboo shoots and mushrooms into a large pot with the stock.  Bring to a boil, reduce heat, and simmer for 5 minutes.
    • Add the soy sauce, sugar, vinegar, pepper, salt and tofu.  Simmer for 3 to 5 minutes.  Mix the cornstarch and water in a separate bowl until well combined.  Add some of the hot stock and stir well.  Gently pour the cornstarch into the soup stirring well.
    • Turn the heat off, add the sesame oil, green onions and bean sprouts.  Gently pour the beaten egg into the soup and stir.
    • Serve and enjoy!
    *If you want a little more heat in your soup, Add 1 tbsp of sambal oelek or dried chili flakes!
    ** If you are using dried shiitake mushrooms, place them in a bowl, cover with boiling water and leave to soften for 20 minutes.  Drain and use.
    ***Enoki mushrooms are miniature button mushrooms that grow in fibrous clumps.  Simply pull off the desired amount, trim the ends and use!

    Thai-Style Lentil & Coconut Soup

    I simply love the flavours of Thai cuisine and since I am on a total soup-kick this month, this soup satisfied my cravings to a "T" !!!  With the addition of the chili and the paprika, this soup can have a little 'kick' to it, but the coconut milk helps to reduce the burn.  This soup is so substantial that it is practically a meal in itself, but is equally as wonderful with a warm roti or naan bread on the side!!!
    THAI-STYLE LENTIL & COCONUT SOUP
    Ingredients:
    2 tbsp coconut oil (or grapeseed, avocado, or EVOO)
    2 red onions, finely chopped
    1 red chili, seeded and finely sliced
    2 garlic cloves, chopped
    1" piece of fresh lemon grass, outer layers removed and heart thinly sliced
    1 cup red lentils, rinsed
    1 tsp ground coriander
    1 tsp paprika
    400mL of coconut milk (unsweetened)*
    3 3/4 cups water
    Juice of 1 lime
    3 spring onions, finely sliced
    1 cup fresh cilantro or parsley, finely chopped
    Salt and freshly ground black pepper, to taste
    • Heat the oil in a large pot and add the onions, chili, garlic and lemon grass.  Cook for 5 minutes or until the onions have softened, but not browned.  Stir occasionally.
    • Add the lentils and spices.  Pour in the coconut milk and water and stir to combine.  Bring to a boil, reduce the heat and simmer for 40 to 45 minutes, until the lentils are soft.
    • Pour in the lime juice and add the spring onions, cilantro salt and pepper, reserving a little of each of the spring onions and cilantro for garnish. 
    • ENJOY!
    *When you are using canned coconut milk, shake it well before opening as this will ensure that the layers of milk are well combined.*

    Chinese Five-Spice Chicken

    I'll admit it - I run out of dinner ideas and sometimes just don't want to cook dinner.  These are the times that I go to my library of cookbooks and see what inspires me.  Tonight I really didn't know what to make for dinner and with the clock showing 4:30pm, I decided that I better hurry up and decide!  I grabbed my "Looneyspoons" cookbook and  happened to have everything for this recipe in my fridge and pantry.

    CHINESE FIVE-SPICE CHICKEN
    Ingredients:
    4 boneless, skinless chicken breast halves, cut into 1" cubes
    1 tsp of Chinese five-spice powder*
    1 cup trimmed and halved snow peas
    1 cup thinly sliced sweet red pepper
    2 cloves garlic, minced
    2 tsp grated ginger root
    3 cups low-sodium, reduced-fat chicken broth
    1 1 /2 cups uncooked long grain white rice
    1/2 cup chopped green onions
    2 tbsp lime juice
    2 tbsp reduced-sodium soy sauce
    1 tbsp honey
    2 tsp sesame oil
    1/4 tsp each crushed red pepper flakes and black pepper
    • Combine chicken and five-spice powder in a large bowl.  Toss or stir to coat chicken evenly with spice.
    • Spray a large saucepan with non-stick spray.  Add chicken and cook over medium-high heat, stirring often, until no longer pink.
    • Add snow peas, red pepper, garlic and ginger root.  Cook and stir over medium heat for 2 to 3 minutes.
    • Add all remaining ingredients and bring to a boil.  Reduce heat to medium-low.  Cover and cook for 20 to 25 minutes, until liquid is absorbed by rice and chicken is very tender!
    *Five-spice powder is a seasoning commonly used in Chinese cooking.  It is a blend of cumin, cloves, fennel, Szechuan peppercorns, and star anise.  You can find it in most supermarkets and of course, Asian specialty stores!
