Cheese Tortellini Soup

As always, I needed a fast recipe because I arrived home late (story of my life it seems!)  Besides having to pick up the tortellini on my way home (I grabbed these gluten free tortellini from Zehrs), I had everything else on hand! Fast, easy, inexpensive and tasty - try it!!

CHEESE TORTELLINI SOUP
Ingredients:
1 package of refrigerated fresh tortellini
6 cups of chicken broth
1 large can of diced tomatoes
1 tbsp olive oil
1 onion, diced
2 handfuls of fresh spinach or arugula
1 tbsp dried basil
1 tsp freshly ground pepper
  • Heat oil over medium high in a large pot.  Add onions and saute until golden brown.  Add stock and bring to a boil.
  • Once boiling, add tortellini.  Reduce heat to medium and cook until al dente.
  • Add tomatoes and juice, arugula, dried basil and ground pepper.  Simmer until arugula is wilted.
  • Serve with Parmesan grated over top, if desired.
  • ENJOY!

Butternut Squash and Chickpea Curry

I needed something that would be quick and easy, include ingredients that I had on hand, and would make enough for a couple of dinners...Jamie Oliver to the rescue!  This recipe popped up on my Twitter feed and it completely fit the bill.  My only complaint is that it isn't hot enough for me, but my kids enjoyed it (and I just added more chili to mine!)  For someone who doesn't love leftovers; I ate this all week and enjoyed it more and more as the flavours deepened!!

BUTTERNUT SQUASH & CHICKPEA CURRY
Ingredients:
1 butternut squash, peeled, seeded and diced into 1" chunks
1 tbsp freshly grated ginger
1 large onion, diced
4 cloves of garlic, minced
1 fresh red Thai chili sliced
1 bunch of fresh cilantro, leaves removed and stems finely diced
1 tbsp coconut oil
1 tsp mustard seeds
1 tbsp curry powder
1 tsp turmeric
1 large can of diced tomatoes
2- 400g cans of coconut milk
2-400g cans of chickpeas, drained and rinsed
  • Melt coconut oil over medium high heat in a large skillet.  Add ginger, garlic, red chili and onion.  Stir frequently until golden brown.  Add mustard seeds, curry, and cilantro stems.  Saute until crispy.
  • Add the turmeric, can of tomatoes with juice, and coconut milk.  Bring to a boil and add squash and chickpeas.  Reduce heat to medium and simmer until tender and sauce has thickened (approximately 25 to 30 mins).
  • Serve over a bed of basmati rice.
  • ENJOY!

1 medium white onion, diced
900g bag of frozen, diced hashbrown potatoes

Sausage & Cannellini Bean Stew

We have been experiencing a deep freeze lately (- 44C with windchill...really?!) and weather like this calls for comfort foods such as stew.  I made this dish with ingredients we had on hand and it is a family favourite!  This is absolutely delicious when served with crusty bread or garlic toast!

SAUSAGE & CANNELINI BEAN STEW
Ingredients:
1 tbsp grapeseed, or EVOO*
6 to 8 large Italian sausages (sweet or hot)
1 large onion, sliced
2 cloves garlic, finely diced
1 leek, trimmed and thinly sliced
2 large carrots, peeled and diced
2 medium-sized potatoes, peeled and diced
2 tsp smoked paprika (sweet paprika would also work well)
1 tsp dried thyme
2 bay leaves
1 tsp freshly ground, black pepper
1 - 680mL jar of passata (strained tomatoes)*
1 cup beef stock
1 - 19 fl oz can of cannellini (white kidney) beans, undrained*
  •    Heat oil in a large pot over medium high heat.  Place whole sausages in the pot and saute, turning frequently, until evenly browned but not fully cooked.  Remove sausages from pot and set aside on a cutting board.  Slice sausages into 1" chunks.
  • Place onions, garlic, and leeks in pot.  Saute until onions are translucent, stirring constantly to prevent garlic burning.
  • Add carrots, potatoes, paprika, thyme, bay leaves and pepper.  Saute 8 to 10 minutes.  Stir frequently.
  • Add passata, beef stock and beans.  Stir and bring to a boil.
  • Reduce heat to medium low.  Add sausages, stir and cover. Cook for 20 to 25 minutes, stirring occasionally.
  • Remove lid and cook for an additional 10 minutes.  Season to taste with salt and pepper.  Remove bay leaves.
  • Serve with crusty bread or garlic toast.  ENJOY!
*EVOO = extra virgin olive oil
*Passata should be a pantry staple - it is inexpensive and versatile!
*By not draining the beans, the stew will become thicker.

Tomato & Olive Antipasto

One of my favourite preserves of each summer is this recipe for tomato & olive antipasto.  I tried it years ago from the book "The Complete Book of Pickling" by Jennifer MacKenzie, and have made it yearly ever since!  It is a fair amount of dicing, but well worth it in the end. Naturally you don't necessarily need to preserve this antipasto and can make it and keep it in the fridge, but the wonderful summer flavours will last longer if canned!  This tastes amazing with rich cheeses and cured meats such as salami!
8oz wide-mouthed jar fresh from the canner!

TOMATO & OLIVE ANTIPASTO
Ingredients:
10 cups chopped Roma tomatoes (you can peel them but I don't and the texture is fine)
1 1/2 cups finely chopped onions
1 1/2 cups diced red bell peppers
1 cup diced green bell pepper
1 cup diced celery
2 tbsp minced garlic
2 bay leaves
1 cup granulated sugar
1 tbsp pickling or canning salt
1 tbsp dried basil
2 tsp dried oregano
1/2 tsp freshly ground black pepper
1 1/2 cups red or white wine vinegar (I use red for the rich colour it gives)
1/2 cup drained rinsed brine-cured olives, diced or slivered*
  • In a food processor or blender, puree 2 cups (500 mL) of the tomatoes until smooth (alternatively you can use passata).
  • In a large pot, combine pureed and diced tomatoes, onions, red and green peppers, celery, garlic, bay leaves, sugar, salt, basil, oregano, pepper and vinegar.  Bring to a boil over medium-high heat, stirring often to prevent burning on the bottom of the pot.
  • Reduce heat and boil gently, stirring often, for about 2 hours or until the antipasto is reduced by about half and is thick enough to mound on a spoon.
  • Meanwhile prepare canner, jars and lids.
  • Stir olives into antipasto and boil gently, stirring often, for 5 minutes to blend the flavours.  Discard the bay leaves.
  • Ladle hot antipasto into hot jars, leaving 1/2" headspace.  Remove air bubbles by sliding the handle of a spoon into the antipasto, and adjust headspace as necessary.  Wipe rim of jar and place hot disc on jar.  Screw band down until fingertip tight.
  • Place jars in canner and return to a boil.  Process for 20 minutes.  Turn off heat and remove canner lid.  Let jars stand in water for 5 minutes.  Transfer jars to a towel-lined surface and let stand for 24 hours.  Check lids and refrigerate any jars that are not sealed.
  • ENJOY!!
*I find the antipasto sits nicer on a cracker when diced but this is just preference!
**This recipe makes approximately 8 250mL jars or four 500 mL jars

Cajun Shrimp & Sausage Fettuccini

I made this dish for my friend Anne who sent me a less-than-subtle message on Facebook asking for this dish (in fact she sent me the recipe and said "Make this for me")...so I did!  Here is a fantastic dish that I served at a dinner party and disappeared in no time!!!

CAJUN SHRIMP & SAUSAGE FETTUCCINE
Ingredients:
1/2 to 3/4 lb cooked fresh fettuccine
2 tbsp olive oil
1 lb peeled, deveined raw large shrimp
1 tbsp plus 2 tsp Essence Seasoning (recipe below)
1 1/2 hot or smoked turkey sausages (I used turkey/chicken ones from Costco), diced into 1/2" pieces
1/2 cup diced green bell peppers
1/2 cup diced yellow onion
1 tbsp minced garlic
1/2 cup chicken stock
1 tsp dried thyme
1 tsp dried basil
1/2 cup heavy cream
1/2 cup grated Parmesan Reggiano or Peccorino Reggiano
 Essence Seasoning:
2 1/2 tbsp Hungarian paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme
  • Heat 1 tbsp of oil over medium heat in a large saute pan.  Season the shrimp with 2 tsp of the Essence.  Place the shrimp in the pan and saute until almost done.  Remove the shrimp from the pan and set aside.
  • Place the remaining oil in the saute pan along with the onion and bell peppers.  Saute, stirring until the onions are translucent (about 3 mintues).  Add the sausage and cook another minute.
  •  Add the garlic to the pan and saute, stirring quickly to avoid garlic burning, for another 30 seconds.
  • Add the chicken stock to the pan and scrape up any browned bits from the bottom of the pan.  Add the thyme, 1 tbsp of Essence and 1/2 tsp salt and cook for 2 minutes.
  • Add the heavy cream to the pan and cook for an additional 2 minutes.
  • Return the shrimp and pasta to the pan.  Continue to cook the sauce and pasta, stirring occasionally to combine.  Remove from the heat and add the basil and Parmesan.
  • ENJOY!

Easy Slow Cooker Beef Stew

With the awful cold, winter weather we are still receiving, this is a lovely and easy stick-to-your ribs kind of meal....simply awesome comfort food!
EASY SLOW COOKER BEEF STEW
Ingredients:
3 lbs of cubed stewing beef
1/4 cup all-purpose flour (I used Bob's Red Mill gluten-free)
1/2 tsp salt
3 tbsp olive oil
1 cup baby carrots
4 large potatoes, scrubbed and cubed
1 tbsp dried parsley
1 tsp ground black pepper
 2 cups boiling water
1 package of dried onion soup mix
 3 tbsp butter
3 onions, sliced
1/4 cup red wine
1/4 cup warm water
2 tbsp all-purpose flour

  • Place beef in a large plastic bag. Combine 1/4 cup flour with 1/2 teaspoon salt; pour into the bag with the meat, and shake to coat.
  • Heat olive oil in a large skillet over medium-high heat. Add stewing beef, and cook until evenly browned on the outside. Transfer to a slow cooker along with the carrots, potatoes, parsley, and pepper. In a small bowl, stir together 2 cups of boiling water and dry soup mix; pour into the slow cooker.
  • In the same skillet, melt butter and saute onions until softened; remove to the slow cooker. Pour red wine into the skillet, and stir to loosen browned bits of food on the bottom. Remove from heat, and pour into the slow cooker.
  • Cover, and cook on high for 30 minutes. Reduce heat to low, and cook for 6 hours, or until meat is fork tender. In a small bowl or cup, mix together 2 tablespoons flour with 1/4 cup warm water. Stir into stew, and cook uncovered for 15 minutes, or until thickened.
  • ENJOY!!
*We enjoy a little kick to our food so we added some of the sherry peppers we eke out from Bermuda - it adds such a lovely flavour to stews (meat or fish) if you can find it!*

Moroccan Chicken Tagine with Almonds & Saffron

A friend of ours has an annual "Groundhog Day" dinner party with a different theme each year...this year it was Moroccan food!!! YUMMY!  This is a mild and flavourful dish ~ and don't omit the cilantro as it does more than merely garnish the dish; it makes a vital contribution to the flavour and character of the dish!  As this was prepared for a large number of people, I shredded the chicken rather than leave it in large pieces, but it didn't affect the presentation or flavour at all!

MOROCCAN CHICKEN TAGINE WITH ALMONDS & SAFFRON
Ingredients:
2 tbsp olive oil
4 large chicken breasts
2 onions, finely chopped
2 celery stalks, finely chopped
2 small carrots, finely chopped
1 garlic clove, crushed
2/3 cup chicken stock
A large pinch of saffron threads
1/3 cup almonds, freshly ground (or almond meal)
Salt and black pepper, to taste
1/2 cup of roughly chopped cilantro leaves
  • Heat the oil in a Dutch oven or other heavy pot with a lid.  Add the chicken and brown evenly.  Transfer chicken to a paper towels to drain.
  • Add the onions, celery, carrots and garlic to the pot and cook gently for 5 to 7 minutes, or until lightly coloured.  Add the stock and saffron.  Stir in the almonds, season with salt and pepper and bring to a boil.  Return the chicken to the pot and add enough water to almost cover the chicken.
  • Heat to a simmer, then cover the pot tightly and cook gently for about 30 to 40 minutes, or until the juices run clear when the thickest part of the chicken is pierced with a knife.
  • Remove the chicken to a warmed serving platter, cover and keep warm.  Boil the cooking liquid to reduce it to a thicker consistency and intensify the flavours.
  • Scatter the cilantro leaves over top and serve.
  • ENJOY!

Winter Squash, Sausage & Feta Bake

I found this recipe in "Taste of Home" magazine (it actually won 1st place in their Oct/Nov 2012 edition!!)  and since I had a butternut and acorn squash I decided to give it a whirl...it was delicious! The kids weren't big fans as they don't love chunks of squash, but Greg and I thoroughly enjoyed it!

WINTER SQUASH, SAUSAGE & FETA BAKE
Ingredients:
1lb Italian sausage meat
2 large onions, chopped
1/2 tsp crushed red pepper flakes, divided
1/4 cup olive oil
2 tsp minced fresh rosemary
1 1/2 tsp salt
1 tsp Worcestershire sauce
1 tsp black pepper
1 medium butternut squash, peeled, seeded and cut into 1" cubes
1 medium acorn squash, peeled, seeded and cut into 1" cubes
2 cups crumbled feta cheese (ran out of goat feta so used grated goat cheddar instead)
2 small sweet red peppers, chopped
  • Heat oven to 375F.
  • In a large skillet over medium high heat, cook sausage, onions and 1/4 tsp red pepper flakes for 8 to 10 minutes, or until sausage meat is no longer pink and onions are tender.  Drain off fat.
  • In a large bowl combine the olive oil, rosemary, salt, Worcestershire sauce, pepper, and remaining pepper flakes.  Add butternut and acorn squash, cheese, red peppers and sausage mixture.  Toss to coat.
  • Transfer to an ungreased large shallow roasting dish.  Cover and bake for 35 minutes.  Uncover and bake 10 to 15 minutes longer or until squash is tender.
  • ENJOY!

Rockin' Moroccan Stew

Years ago I discovered this stew recipe in my "Crazy Plates" cookbook and I had forgotten about it until we recently went to a friend's Moroccan-themed dinner party!  It is simple, nutritious, filling, delicious and low fat....what more could you want?!?!

ROCKIN' MOROCCAN STEW

1 clove garlic, minced
3 cups vegetable broth
3 cups peeled, cubed sweet potatoes
1 can (19oz) diced tomatoes, drained
1 can (19 oz) drained and rinsed chickpeas
1 tbsp lemon juice
2 tsp grated fresh ginger
1 tsp each of ground cumin, curry powder, ground coriander, and chili powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup raisins (I didn't have any so I used dried cranberries)

  • Heat olive oil in a large Dutch oven over medium high heat.  Add onions, celery, green pepper, and garlic.  Cook and stir until vegetables begin to soften (approx. 3 minutes)
  • Add all remaining ingredients, except raisins, peanut butter and cilantro.  Bring to a boil.  Reduce heat to low and simmer, covered, for 20 minutes.
  • Stir in raisins, peanut butter and cilantro.  Mix well.  Simmer for 5 more minutes.
