Rockin' Moroccan Stew

Years ago I discovered this stew recipe in my "Crazy Plates" cookbook and I had forgotten about it until we recently went to a friend's Moroccan-themed dinner party!  It is simple, nutritious, filling, delicious and low fat....what more could you want?!?!

ROCKIN' MOROCCAN STEW
Ingredients:
2 tsp olive oil
1 cup chopped onions
1/2 cup each of diced celery and chopped green bell pepper (I only had orange for the dish pictured!)
1 clove garlic, minced
3 cups vegetable broth
3 cups peeled, cubed sweet potatoes
1 can (19oz) diced tomatoes, drained
1 can (19 oz) drained and rinsed chickpeas
1 tbsp lemon juice
2 tsp grated fresh ginger
1 tsp each of ground cumin, curry powder, ground coriander, and chili powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup raisins (I didn't have any so I used dried cranberries)
2 tbsp each light peanut butter, and chopped fresh cilantro
  • Heat olive oil in a large Dutch oven over medium high heat.  Add onions, celery, green pepper, and garlic.  Cook and stir until vegetables begin to soften (approx. 3 minutes)
  • Add all remaining ingredients, except raisins, peanut butter and cilantro.  Bring to a boil.  Reduce heat to low and simmer, covered, for 20 minutes.
  • Stir in raisins, peanut butter and cilantro.  Mix well.  Simmer for 5 more minutes.
  • ENJOY!

Chocolate Peanut Butter Cupcakes (Gluten, Soy, Casein Free!!)



For a month I have been placed (willingly, I might add!) on a rebalancing diet which essentially means no wheat, cow's milk products, refined cane sugars, soy products, or yeasts.  This can be extremely tricky for the uninitiated - fortunately I have virtually been cooking this way for a year since my daughter India, and husband Greg, have also been on this diet and chosen to eat this way permanently because of how wonderful they felt afterwards.

I have my annual book club meeting tonight at the house of my girlfriend, Kathy (who is also on the same rebalancing diet!) and so, I decided to whip up these little treats for us to snack on!!!  They are really yummy and I obtained almost all of the ingredients at my local "Bulk Barn"!  The recipe comes from an amazing blog ~ gingerlemongirl which you should all check out!  As you can see from the photos, I made a dozen mini-cupcakes for the book club, and the others were for India and Devon as an after-school treat!!  This recipe will make a dozen regular sized cupcakes (there was one large and small cupcake that I didn't photograph as they are presently in my stomach!!!)



CHOCOLATE PEANUT BUTTER CUPCAKES
Ingredients:
Cupcakes ~
1/3 cup brown rice flour 
1/3 cup tapioca flour
1/3 cup sorghum flour
1/2 tsp xanthan gum
3/4 cup sugar (I used coconut sugar)
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp baking soda
3/4 cup non-dairy milk (I used unsweetened almond milk)
1/2 tsp pure vanilla extract
2 eggs, slightly beaten

  • Preheat oven to 350 degrees. Grease cupcake cups and dust pan lightly with sweet rice flour.
  • In a medium sized bowl, whisk together all dry ingredients. Make a well in center of dry ingredients. Add milk, oil, vanilla, and beaten eggs. Whisk together until combined and pour into prepared cups.
  • Bake in preheated oven for 20-25 minutes until a toothpick inserted in the middle comes out clean. Do not over bake as these can dry out quickly!!
  • Cool cupcakes completely before frosting.
 Frosting ~
1/2 cup natural peanut butter
1 1/2 cups powdered sugar (I used agave syrup)
1/2 tsp vanilla extract
2 - 4 tbsp non-dairy milk (I used unsweetened almond milk)
Glaze ~
 1/2 cup chocolate chips (I used Callebaut chips)
1 tbsp oil (grapeseed, coconut, or olive)
3 - 4 tbsp water

  • In a large bowl mix peanut butter with powdered sugar. Add vanilla and non-dairy milk. You can add more or less milk to create the consistency you prefer.
  • Spread peanut butter icing over completely cooled cupcakes.
  • In another bowl melt chocolate chips and oil over a pot of simmering water, until melted. Whisk in water, 1 tablespoon at a time, until you get a drizzling chocolate sauce consistency. Drizzle glaze over frosted cupcakes.
  • Serve immediately or chill.

Easy Peanut Butter Cookies

For some reason my kids have been on a complete peanut butter kick lately?!  Anyway, before they headed off to school today they put in a request that I try and make peanut butter cookies for their after school snack.  Now, anyone who knows me knows that I am a self-confessed non-baker.  So I pulled the jar out of the cupboard and went online.  This recipe comes from the Kraft website and it is by far the easiest recipe EVER!  I have already tasted one cookie and they're yummy!  Next time I am adding chocolate chips!!
EASY PEANUT BUTTER COOKIES
Ingredients:
1 cup peanut butter
1/2 cup granulated sugar
1 egg
  • Preheat oven to 325F.
  • In a large bowl, combine all the ingredients until well mixed (I used my hand mixer).
  • Roll dough into 1 1/2" balls and space 2" apart on a greased cookie sheet.  Flatten each ball with a fork (to give the cookie it's traditional cross-hatching on top!), and place in the oven for 15 minutes, or until golden brown.
  • Remove from oven and let cool on a rack.
  • ENJOY!

Thai Cashew Turkey and Broccoli on Quinoa


As I have said in previous blog entries concerning quinoa, it is a perfect superfood!  It is high in vitamins and minerals such as riboflavin, calcium, vitamin E, iron, potassium, phosphorus, magnesium, folic acid, and beta carotene.  It is not from the same family as wheat and is therefore, gluten-free which makes it the perfect food for those with celiac disease, Crohn's disease, or colitis.  It has also been identified as ideal for autistic children or those with ADD.  Quinoa is rich in the amino acid histadine, which cannot be formed by combinations of nutrients and instead must be provided directly in the diet.  Histadine is considered an essential amino acid in children because it is necessary for human development....and lastly, it is always organic because the saponin (or bitter coating on the quinoa grain) is a natural pesticide!!!

THAI CASHEW TURKEY AND BROCCOLI ON QUINOA
Ingredients: 
4 boneless, skinless chicken breasts (or turkey!)
1/4 cup soy sauce or gluten-free tamari
2 tbsp oyster sauce (I used seasoned rice vinegar)
1 tsp minced fresh garlic
2 tsp minced fresh ginger
2 cups water
1 cup quinoa
4 tsp sesame oil
2 cups broccoli florets
1 cup thinly sliced onion
3/4 cup water
3 tbsp peanut butter
1 tbsp honey (I used maple syrup)
1 cup unsalted, toasted cashews (I didn't have any so I used pistachios)
  • Slice the chicken into thin pieces and place in a large, sealable plastic bag.  Combine the soy sauce, oyster sauce, garlic and ginger in a bowl and pour into the bag with the sliced chicken.  Place in the refrigerator for at least 1 hour (and up to 24 hours) to marinate.
  • Bring the water and quinoa to a boil in a medium saucepan*.  Cover.  Reduce the heat to a simmer and cook for 10 minutes.  Turn the heat off and leave the covered saucepan on the burner for another 6 minutes.  Fluff with a fork and set aside
  • Place 2 tsp sesame oil in a large frying pan over medium heat.  When the oil is hot, add the broccoli and onion and cover the pan.  Stir frequently and add 1 tbsp of water if the saucepan appears dry.  Cook until the onion is opaque and the broccoli tender, about 8 to 10 minutes.  Transfer to a bowl and set aside.
  • Remove the chicken, reserving the marinate.  Place the remaining sesame oil and the chicken into the frying pan on medium-high heat and cook until the chicken is no longer pink, about 7 to 8 minutes.  
  • Reduce the heat to medium and add the marinade to the pan.  Stir in the water, peanut butter, and honey and cook for 1 minute.  Toss in the broccoli and onion mixture and stir thoroughly.
  • Divide the quinoa among individual serving plates.  Top with the chicken and broccoli mixture.  Sprinkle with toasted cashews**and serve!
*Check on your bag of quinoa to see if it is prewashed or not.  If it doesn't say it has been washed, place the quinoa in a fine sieve and rinse with cold water.  Quinoa has a bitter coating on the outside of it and rinsing it removes this bitter coating (saponin).  I find no matter if it is washed or not, it improves the taste!
**To toast cashews, place in a single layer on a rimmed baking sheet and put into a 350F oven for approximately 5 to 10 minutes - keep an eye on the nuts as the oils can cause them to burn quite quickly!  Shake the pan occasionally to ensure even toasting!

Nutty Chicken Stir-Fry

I found this recipe in "Taste Of Home" magazine this month and the entire family LOVED it (especially India, which is great because it totally accommodates her dietary restrictions at the moment!!!)  Best of all?  It's a fast, easy meal that uses some of the left over bits and pieces of vegetables that might be hanging out in your crisper!!

NUTTY CHICKEN STIR-FRY
Ingredients:
1 lb boneless, skinless chicken breasts, chopped (I used leftover chicken that I simply shredded and reduced the cooking time as it was pre-cooked)
1 tbsp EVOO
1/2 cup chopped broccoli or cauliflower, or both!
1/2 yellow pepper, thinly sliced
1 finely chopped onion
6 garlic cloves, minced
2 tbsp brown sugar (or 1 tbsp agave syrup)
4 tsp cornstarch (or 4 tsp brown rice flour)
3/4 tsp ground ginger
1/2 cup chicken broth
1/3 cup reduced sodium soy sauce (I used Bragg's as it contains no yeast or wheat)
1/4 cup chunky peanut butter (or 1/4 cup roasted almond butter)
5 to 6 drops of hot pepper sauce
3 cups shredded cabbage
3/4 cup unsalted peanuts, chopped (or 3/4 cup chopped, unsalted pistachios)
Hot cooked basmati rice
  • In a large skillet or wok, stir-fry the chicken in the oil for 2 to 3 minutes over medium-high heat.  Add broccoli, peppers, and onions.  Cook 4 minutes longer.
  • Add garlic and stir-fry until the chicken is no longer pink inside and vegetables are crisp-tender.
  • In a small bowl, combine the brown sugar, cornstarch and ginger; stir in the broth, soy sauce, peanut butter and pepper sauce until blended.  Pour over chicken mixture in wok.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.  Add cabbage; cook 2 to 3 minutes longer or until crisp-tender.  Sprinkle with peanuts and serve over rice!

Homemade Chicken Tenders

I created this large serving dish of tenders from only
four chicken breasts - economical, easy and
ingredients you don't need a science degree to
pronounce or understand!
The kids had friends over last night for a playdate and some dinner - I thought that my homemade chicken tenders would be perfect for dinner...and judging by how quickly the kids gobbled them up, they were!  These are so simple that usually my 7 year-old son, Devon, makes these himself and I simply slice the chicken breasts and put them in the oven for him! 
We originally got this recipe from the Canadian Living television show "Best Recipes Ever" and the sauce that she suggested is also great - so I have included that also in case you want a change from plum sauce or ketchup in your household!!

HOMEMADE CHICKEN TENDERS
Ingredients:
4 boneless, skinless chicken breasts sliced into 'fingers'
1 egg
1 tbsp cold water
1 cup dry bread crumbs
1 tbsp chopped fresh coriander or 1/2 tsp dried basil
1 tsp cajun seasoning
1/4 tsp onion salt

  •  In shallow bowl, whisk egg with cold water. In another shallow bowl, combine bread crumbs, coriander, Cajun seasoning and salt. Dip chicken strips into egg mixture, then into bread crumb mixture to coat all over.
  • Arrange chicken on greased rimmed baking sheet. Bake in 400°F (200°C) oven until golden and no longer pink inside, about 15 minutes.

  PEANUT PEACH SAUCE
Ingredients: 
1/4 cup apple juice or cider
1/4 cup smooth peanut butter
 2 tbsp peach or aprict jam
 1 clove garlic, minced
1-1/2 tsp cider vinegar

 
  • In microwaveable bowl, combine apple juice, peanut butter, apricot jam, garlic and vinegar; cover and microwave at Medium-High (70%) for 2 minutes or until blended and warm, stirring once.
  • Serve warm with chicken strips for dipping.

Glazed Peanut Butter Bars


I spied these in a magazine and thought they would be an easy after school treat for India and Devon (not to mention an after work treat for Greg!) These chewy and sweet bars are absolutely delicious and I bet you can't just eat one!!

GLAZED PEANUT BUTTER BARS
Ingredients:
3/4 cup butter, softened
3/4 cup creamy peanut butter
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tsp water
1 1/2 tsp vanilla extract
1 1 /2 cups all-purpose flour
1 1/2 cups quick cooking oats
3/4 tsp baking soda
1/2 tsp salt
GLAZE:
1 1 /4 cups milk chocolate chips
1/2 cup butterscotch chips
1/2 cup creamy peanut butter
  • In a large bowl, cream the butter, peanut butter and sugars until light and fluffy. Beat in the eggs, water and vanilla. Combine the flour, oats baking soda and salt,; gradually add to the creamed mixture.

  • Spread into a greased 15"x10"x1" baking pan. Bake at 325F for 18-22 mins. or until lightly browned.

  • For glaze, in a microwave safe bowl, melt chips and peanut butter; stir until smooth. Pour over warm bars; spreading evenly. Cool completely on a wire rack before cutting.

  • ENJOY!!!!

Peanut Butter Oat Cookies

I wanted to make a yummy and somewhat nutritious after-school snack for my friend Michelle's and my children on Friday. I didn't have much time and didn't want to run out to the store to buy ingredients so I dove into my huge collection of recipes and found this gem! I hope you enjoy them as much as we all did!

PEANUT BUTTER OAT COOKIES
Ingredients:
1 cup butter, melted
1 cup natural peanut butter
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tsp pure vanilla extract
1 1/4 cups whole wheat flour
1 cup wheat bran
3/4 cup quick cooking oats
2 tsp baking soda
  • Preheat oven to 350F
  • In a medium sized bowl, cream the butter, peanut butter and sugars together with a hand mixer, until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  • Combine the remaining ingredients; stir into the creamed mixture and mix well.
  • Drop by tablespoonfuls 2" apart onto baking sheets lined with parchment paper (or if non-stick, make sure the pan is ungreased).
  • Bake for 10 - 12 minutes or until golden brown.
  • Cool for 3 minutes on the pan until removing to wire racks.
  • ENJOY!!

*low fat or thinnner brands of peanut butter do not work well with this recipe*

Soup Kitchen Faves

Someone commented to me that if my blog is called "soup kitchen", how come there's no soup recipes on there? Funnily enough I LOVE soup and am usually making all sorts, but prior to creating this blog I stocked my freezer so I haven't been cooking any lately! Victoria, I will put some of my favourites on here and then add photos later on when I make them again, okay?!


FENNEL & POTATO SOUP

Ingredients:
3 tbsp of unsalted butter
2 medium-sized fennel bulbs (sometimes called anise), trimmed, chopped and reserve some of the fronds for garnish
1 large leek, halved lengthwise, rinsed and thinly sliced crosswise
1 tsp of fennel seeds
1 1/2 lbs of potatoes, peeled and cut into 2" cubes
5 1/2 cups of broth (I use vegetable, but you can also use chicken)
  • Melt butter in a large pot over medium-high heat. Add fennel, leak and seeds and cook until the vegetables become soft. Make sure to stir often to prevent sticking and burning!
  • Add potatoes and broth. Bring to a boil, then reduce heat to medium. Cover with a lid and simmer until potatoes are tender (approx. 15 mins).
  • Either using an immersion-style blender (a MUST for soups in my books!), or a standing blender, puree the soup until smooth. If it is too thick for your liking, you can thin it using water or stock.
  • Season to taste with salt & pepper.
  • When serving, garnish with fennel fronds. If you enjoy smoked salmon, you can also garnish with a few pieces of this too!
*This soup freezes really well!*


SPICED PARSNIP SOUP
Ingredients:
2 tbsp unsalted butter
1 medium onion, chopped
1 lb parsnips, peeled and chopped
1 clove of garlic, peeled and chopped
2 tsp hot curry powder
3 1/4 cups of vegetable or chicken stock
1/2 cup heavy cream
salt & pepper
Paprika or red pepper flakes for garnish
  • Melt butter in a large pot, and saute onion. Add garlic and parsnips and continue sauteing.
  • Add stock to pot and bring to a boil. Reduce heat and simmer until parsnips are tender (approx. 15 to 20 mins). Take off of the heat.
  • Puree using an immersion blender or standing blender.
  • Add cream and stir. Season to taste using salt and pepper and garnish before serving!
*This soup freezes really well!*

PARSNIP & GINGER SOUP
Ingredients:
2 tbsp EVOO (Extra Virgin Olive Oil)
1 onion, chopped
1 clove of garlic, peeled and chopped
1 carrot, peeled and chopped
1 lb parsnips, peeled and chopped
1 tbsp freshly grated ginger
4 1/2 cups of vegetable stock
2 tsp of creamy peanut butter
1 tbsp Tamari (or regular soy sauce)
salt & pepper
  • In a large pot, saute onion in EVOO until translucent and then add the garlic, ginger, carrot and parsnips. Saute for a few minutes and then add the stock.
  • Bring soup to a boil and then reduce heat. Simmer until parsnips are tender.
  • Add peanut butter and tamari to taste.
  • Puree with an immersion or standing blender.
*My children love this and we call it "peanut butter soup" so that there is no objections to the mention of vegetables!*
