Kale with Crispy Salami

This is a super quick as well as super nutritious side dish ... not to mention super tasty!!!  ENJOY!!

KALE WITH CRISPY SALAMI
Ingredients:
1 tbsp honey or maple syrup
2 tsp balsamic vinegar
Pinch cayenne
3 tsp sea salt
5 cups of kale leaves, torn into bite-sized pieces
2 tbsp olive oil
3 large shallots, peeled and sliced into thin rings
8 thin slices of salami, cut into narrow strips (Italian or Hungarian are our faves!)
Black pepper
  • In a small bowl, whisk together honey, vinegar and cayenne.  Set aside.
  • Add about 3" of water to a large pot, add salt and bring to a boil.  Toss in kale and parboil about 3 minutes.  Drain, and let kale dry out in sieve.
  • In a large skillet, heat olive oil over medium heat.  Add shallots and stir-fry until they start to colour (approx 5 minutes).  Remove to a small dish.  Increase heat in skillet to medium high and add salami strips.  Cook until crisp.  Transfer the salami to another dish.
  • Add kale to skillet and toss quickly.  Kale should just be heated otherwise it will overcook and become soggy.  Remove from the heat, add honey mixture and shallots and toss.  Season to taste with pepper.  Transfer the kale to your serving bowl or platter and garnish with the salami.

Peperonata

As I was having my friend Emily over for dinner, who is of Sicilian origin, I decided to make this traditional side dish.  I was a little nervous as I have never made it before - how arrogant to presume to serve a Sicilian a traditional dish without having ever created it before?!  However, Emily assured me that her mother would approve!  I think you will too as it is super-easy and super-tasty!!  It is lovely the next day heated up to compliment your scrambled eggs at breakfast!

PEPERONATA
Ingredients:
1/2 cup EVOO
1 medium onion, halved and thinly sliced
4 garlic cloves, finely diced
3 bay leaves
2 tbsp tomato paste
1 1/2 tsp Kosher salt and 1 tsp freshly ground black pepper
6 bell peppers (2 red, 2 yellow, 2 green) roughly chopped into 2" dice
1 cup dry white wine
1/2 bunch fresh basil, torn
2 tsp balsamic vinegar
  • Heat the extra virgin olive oil (EVOO) in a Dutch oven or a large skillet.  Saute the onions, garlic, and bay leaves over medium heat until the onion is soft (approx. 6 minutes).  Add the tomato paste, salt and black pepper.  Continue stirring until the tomato paste turns a dark, brick red colour.
  • Add the bell peppers and saute until they are softened (approx. 10 minutes).  Add the wine and 1 cup of water and bring to a boil.  Reduce the heat to medium low, cover and cook the peppers for a further 20-30 minutes.
  • Uncover, increase the heat to medium and stir until most of the liquid has evaporated 20 to 25 mins.  Remove the bay leaves and add in basil leaves, balsamic vinegar and salt and black pepper to taste.
  • Serve and enjoy!!

Braised Sausage with Grapes and Balsamic-Glazed Onions

We all love sausages and I was intrigued by this recipe that I found in Fine Cooking magazine as it uses red grapes.  Unfortunately the package that I had in the fridge had only 5 sausages in it and the recipe called for 8, but it didn't matter!  Pair with garlic mashed potatoes, a salad or kale chips!!!

BRAISED SAUSAGE WITH GRAPES & BALSAMIC-GLAZED ONIONS
Ingredients
2 tbsp olive oil
8 links of sweet Italian sausage, pricked with a fork
1 lrg yellow onion, thinly sliced
1/2 tsp Kosher salt
1/2 cup chicken broth
2 tbsp balsamic vinegar
20 seedless red grapes, halved lengthwise
2 tbsp chopped fresh oregano, or 1 tbsp dried oregano
  • In a large 12" skillet, heat 1 tbsp of olive oil over medium heat.  Add the sausages and cook, turning every few minutes until they are browned all over (approx. 8 minutes).  Transfer to a large plate.
  • Add the remaining 1 tbsp olive oil and the onion to the skillet with the salt, and saute until the onion softens completely and starts to turn light brown.  Add the chicken broth and balsamic vinegar and scrape the bottom of the skillet  to incorporate any browned bits.
  • Reduce the heat to a gentle simmer.  Add the sausages and grapes, cover the skillet with the lid ajar, and cook, stirring occasionally, until sausages are cooked through (approx. 25 mins or cut one to check)
  • Serve sprinkled with oregano and ENJOY!

Wheat Berry, Kale & Cranberry Salad

With the weather getting much cooler, I must admit that a salad sounds far less appealing than a bowl of warm soup, however this one was too good to pass up!  The chewiness of the wheat berries is nice with the crisp kale and sweet cranberries.  If you don't want to use wheat berries, substitute 2 1/2 cups of quinoa, green lentils or brown rice!
WHEAT BERRY, KALE & CRANBERRY SALAD
Ingredients:
1 cup dried wheat berries
1/2 cup dried cranberries
1/3 cup EVOO
3 tbsp balsamic vinegar
1/2 tsp salt
5 cups chopped kale
1/2 cup diced red or white onion
1 yellow bell pepper, diced
  • Rinse the wheat berries.  Combine with 8 cups water in a medium pot.  Bring to a boil over high heat, reduce heat to medium-high.  Cook, covered, until wheat berries are tender (approx. 30 to 35 mins).  Stir in cranberries during the last 2 minutes of cooking.  Drain and rinse with cold water to stop the cooking process.
  • Whisk olive oil with vinegar and salt in a large bowl.  Season with black pepper.  Stir in wheat berry mixture, kale, onion and bell peppers.  Serve immediately.  Keeps really well refrigerated for up to 1 day!

Sun-Dried Tomato Meat Loaf

This is one of those comforting dishes that is easy to make, is delicious with a side of garlic mashed potatoes, or in between some crusty bread as a sandwich the next day! 
SUN-DRIED TOMATO MEATLOAF
Ingredients:
1 tbsp EVOO
1 1/2 cups thinly sliced shiitake mushroom caps or button mushrooms
1/2 cup minced onion
1 stalk celery, finely chopped
2 cloves garlic, minced
2 tbsp balsamic vinegar
1 egg, beaten
1/2 cup dried bread crumbs
1/3 cup chopped, drained, oil-packed sun-dried tomatoes
1/2 tsp dried thyme
1/4 tsp each salt and black pepper
1 lb lean ground beef or pork
Topping ~
4 tbsp chili sauce or ketchup
1 tbsp Dijon mustard
1/4 tsp dried thyme
  • In a skillet, heat oil over medium-high heat and saute mushrooms, onion, celery and garlic, stirring occasionally, until softened.  Approximately 5 minutes.  Stir in vinegar; reduce until evaporated, about 30 seconds, cool slightly.

  • Meanwhile, in a large bowl combine egg with bread crumbs, tomatoes, thyme, salt and pepper.  Mix in the mushroom mixture and ground beef or pork. 
  • Pack into a 1.5L loaf pan, mounding on top.


  • Topping ~ In a small bowl combine the chili sauce with the mustard and thyme.  Spread over the top of the meatloaf.


  • Place meatloaf into a 350F oven until a meat thermometer registers 170F (75C).  Approximately 45 to 50 minutes.  Let stand for 5 minutes upon removing from oven.  Slice and serve!

Toad - In - The - Hole with Onion Gravy

The kids were intrigued by the name of this traditional British dish, so I decided that since we had wild boar sausages in the freezer from "Cooper's CSA Farm & Maze", that I would recreate this dish!  It was delicious and really simple!
TOAD-IN-THE-HOLE with ONION GRAVY
Ingredients:
EVOO
 8 large good-quality sausages (mine were honey-garlic wild boar)
 2 large red onions, peeled and sliced
2 cloves of garlic, peeled and finely sliced
2 tbsp of butter
6 tbsp balsamic vinegar
1 tbsp good-quality vegetable stock powder or 1 vegetable stock cube
Batter:
1 1/2 cups milk
1/2 cup all-purpose flour
Pinch of salt
3 eggs

  •  Put just under ½ " of oil into a loaf pan, then place this on the middle shelf of your oven at 475ºF.  Place a larger tray underneath it to catch any oil that overflows from the pan while cooking. When the oil is very hot, add your sausages. Keep your eye on them and allow them to colour until lightly golden. 
  • Take the pan out of the oven, being very careful, and pour your batter over the sausages.  It will bubble instantly.  Carefully place the pan back in the oven for at least 20 minutes, to allow the Yorkshire puddings to rise. Do not open the oven door!  Remove from the oven when golden and crisp.
  •  Onion Gravy:  Saute the onions and garlic in the butter on a medium heat for approximately 5 minutes, or until they are translucent. Add the balsamic vinegar and allow it to reduce down by half. Add a stock cube or the stock powder.  Sprinkle this in and add 1 tbsp of water. Allow to simmer and you'll have a really tasty onion gravy!

My AWESOME Salad - CSA Week Two


I was so thrilled to get this week's CSA basket since I received an email from Lisa Cooper saying that we were getting spinach!!! As part of my online Booty Camp Challenge, I not only have eliminated refined sugars and dairy from my diet, but also must have one large salad each day (not too difficult with all the great seasonal produce available now!).
Today I was HUNGRY so I created this using almost all the items from my CSA box! I like to call it a deconstructed salad and everything but the balsamic, vinegar, chickpeas and red onion slivers are from Coopers!
I had frozen a chicken from last summer's CSA and recently roasted it up with fresh herbs, EVOO and salt and pepper. I decided to slice some of this delicious cold chicken and poach an egg to put on top of the baby spinach and green leaf lettuce! The cucumbers and chickpeas were topped with red onion slivers and drizzled with white vinegar ~ yummy! I just snapped a few asparagus spears into bite-sized pieces and sliced up one of my hot house tomatoes to finish it off!
I truly love this time of year for all the amazing produce that's readily available!!! I hope you take advantage of it and create your own salad this weekend!!!

Edamame and Wheat Berry Salad

Although this takes a long time to actually prepare, it is so worth it! The wheat berries are nice and chewy and really make this a satisfying salad. I added red peppers, edamame, celery, feta, garlic scapes and a dressing to make it colourful and flavourful!

WHEAT BERRY & EDAMAME SALAD
Ingredients:
1 (16 ounce) bag frozen edamame
1 cup wheat berries (also called whole wheat kernels)
2 cups vegetable broth
1 red pepper, chopped
1/2 cup crumbled feta
3 chopped green onions, or garlic scapes
2 stalks of celery, finely diced
Dressing:
4 tbsps EVOO
2 tbspss lemon juice
1 tbsp whole grain Dijon mustard
1 tbsps balsamic vinegar
2 tsps dried basil
1 tsp dried dill weed
1 tsp horseradish
1 tsp salt
1 tsp black pepper

Cook wheat berries in a pressure cooker in broth for 45 minutes, or increase the broth 1/2 cup and bring to boil, then reduce and cover and cook for 2 hours or until liqiud is absorbed and berries are tender.

Cook the shelled edamame in boiling water as package instructions require.

Drain edamame and toss with wheat berries. Remove any excess liquid that is made from this process by straining both together in a collander. Mix in other vegetables.

Wisk all the ingredients for the dressing together and pour over salad. Stir to coat.

Refrigerate after salad has cooled and serve the next day.

Sundried Tomato Meatloaf




 
I was inspired to cook this meal when I was talking to my friend Michelle. She made mashed potatoes and meatloaf for dinner the other night and I really got a taste for it! I decided with this super-cold weather, a meal of stodgy comfort food was just the ticket! I got this recipe from "Canadian Living" years ago and love it so much that it has become a family favourite!

 
The beauty of this meatloaf is that it tastes fantastic in a sandwich as well as on the dinner plate, owing to its bold flavours.

 

 
SUN-DRIED TOMATO MEAT LOAF

 Ingredients:
1 tbsp oil (vegetable or olive)
1 1/2 cups of thinly sliced shiitake mushroom caps or white mushrooms
1/2 cup minced onion
1 stalk celery, finely chopped
2 garlic cloves, minced
2 tbsp balsamic vinegar
1 free-range egg
1/2 cup panko or regular bread crumbs
1/3 cup oil-packed sun-dried tomatoes, chopped
1/2 tsp dried thyme leaves
1/4 tsp each, salt and black pepper
1lb of organic ground pork or beef
1/4 cup chili sauce or ketchup
1 tbsp Dijon mustard
1/4 tsp dried thyme leaves 
  • Heat oven to 375F. In a medium skillet, heat oil over medium-high heat and stir fry onions, mushrooms, celery and garlic. Stir occasionally until softened. Add balsamic vinegar and stir until evaporated; about 30 seconds. Remove from heat and let cool slightly.
  • Meanwhile, in a large bowl using a fork, beat the egg. Add the breadcrumbs (I use panko crumbs because I really enjoy the crispiness of them), tomatoes, 1/2 tsp thyme, salt and pepper. Mix in the mushroom mixture and then add the meat. Combine well.
  • Pack mixture into a loaf pan (1.5L), mounding in the middle.
  • In a small bowl, combine chili sauce, Dijon mustard and 1/4 tsp of dried thyme; spread over the top of the meatloaf.
  • * At this point you can cover and refrigerate up to 12 hours*
  • Place in oven and bake until a meat thermometer registers 170F (approximately 50 mins.). Let stand for 5 mins. before slicing and serving.

 
I really think that you will enjoy this updated version of an old classic - the flavours are bold and the sauce is really savoury!! ENJOY!
