- Preheat oven to 400F. Wash sweet potatoes and prick skins with fork. Place in oven on a rimmed baking sheet lined with parchment paper, and bake for 45 mins to 1 hour (or until soft)
- While the potatoes bake, heat oil in a skillet and saute celery, onion and carrot over med-high heat until softened. Transfer to a medium-sized mixing bowl and set aside.
- When sweet potatoes are cooked, cut in half lengthwise, scoop out most of the flesh leaving a thin layer so the skins maintain their shape. Combine with the celery mixture.
- Add shredded chicken to the bowl, along with the mayonnaise, buffalo sauce and spices. Season with salt and pepper.
- Scoop mixture back into the potato skins and bake for 20 minutes more in a 350F oven.
- Sprinkle each potato with optional toppings.
- Serve and ENJOY!!

Beefy Breakfast Bake
- Preheat oven to 350F. In a large skillet, saute the beef with onion powder, 1/2 tsp salt, garlic poweder, sage and pepper flakes over medium heat until no longer pink. Break the beef up into crumbles with the spoon. Stir in spinach and remove from heat.
- Spread potatoes in a greased 13 x 9 baking dish. Top with beef mixture.
- In a large bowl whisk together eggs, ricotta, milk, black pepper, and remaining salt; pour over top of the beef. Sprinkle with Cheddar and top with tomatoes.
- Bake, uncovered for 45 to 50 minutes or until a knife inserted near the centre comes out clean.
- Let stand for 5 to 10 minutes before cutting into squares and serving.

Better Than Take-Out Fried Rice
- Combine soy sauce, vinegar and red pepper flakes in a small bowl.
- Cut bell pepper into 1" pieces.
- Heat oil in large nonstick skillet over medium-high heat. Add bell pepper, green onions, ginger and garlic; stir-fry for 1 minute. Add pork; stir-fry for 2 to 3 minutes or until pork is cooked through.
- Stir in soy mixture and cook, stirring frequently for 1 minute.
- Serve and ENJOY!

Corn Zucchini Relish
That time of year has finally arrived and I am in full-swing with my canning 'operation'!!! The corn this year is fantastic and in abundance; that and zucchini is always abundant so this recipe is perfect (and extremely tasty too!)- Prepare canner, jars and lids as usual
- In a large pot, combine all ingredients. Bring to a boil over medium heat, stirring often until sugar and salt are dissolved. Reduce heat and boil gently, stirring often, for about 30 minutes or until onions and celery are tender and mixture is slightly thickened.
- Ladle hot relish into hot jars, leaving 1/2" headspace. Wipe rim and place hot lid disc on jar. Screw band down until fingertip tight.
- Place jars in canner and return to a boil. Process for 15 minutes. Turn off heat and remove canner lid. Let jars stand in water for 5 minutes. Transfer jars to a towel-lined surface and let stand for 24 hours. Check lids and reprocess any jars that are not sealed.
To cook the corn, boil it in a large pot of boiling water, in batches as necessary, for 5 minutes or until kernels are tender. Remove from water and drain well. Let cool completely. Using either a serrated or chef's knife, cut kernels from cob and measure. You'll need approximately a dozen (12) cobs of corn for the 8 cups required in this recipe!

Zesty Citrus & Chicken Salad
- Whisk all salad ingredients together in a small bowl and set aside.
- Place spinach in a salad bowl, top with the slivered chicken, feta cubes and red grapefruit segments, and sprinkle the cilantro over top.
- Drizzle the dressing over top and ENJOY!!!
* Marinated Feta:
- 1/3 cup olive oil
- 1 tbsp oil-packed sundried tomatoes, diced
- 1 tbsp minced fresh parsley
- 1 tsp crushed red pepper flakes
- 1 tsp dried basil
- 1 tsp minced fresh chives
- 1/4 tsp garlic powder
- 1 lb cubed feta cheese
Place all ingredients in a resealable plastic bag and gently toss. Place the bag in the fridge for at least 1/2 hr. Take out of the fridge at least an hour prior to serving to allow the flavours to fully develop.
