Curried Crab with Coconut and Chili

 Greg and I were watching the "Food Network" and Chef Curtis Stone came on to discuss the best dish he has ever made.  It looked so yummy and easy that we decided to give it a go!  We even went so far as to cover our table with a big sheet of plywood and put kraft paper on top of that for the shells!  Then we invited our friends Mike and Emeli over and feasted!!!!  It is delicious and I think this sauce would be excellent with fish, shellfish, chicken, veggies or even beef!!!!  DO NOT skimp on toasting and grinding the whole spices ~ the flavour that is produced is what makes this dish!!!!

CURRIED CRAB WITH COCONUT & CHILI
Ingredients:
2 1/4 lbs live crab (we used blue crab)
1/4 cup whole coriander seeds
1 1/2 tbsp cumin seeds
1 tbsp whole black peppercorns
Sea salt, to taste
2/3 cup white wine vinegar
1/4 cup desiccated unsweetened coconut flakes
1 tbsp finely grated fresh ginger
5 garlic cloves
1 white onion, chopped
1 large green chile, chopped roughly
1 tbsp coconut oil (or olive)
1 medium ripe tomato, diced
10 fresh curry leaves (didn't have this so I used 2 tbsp hot curry powder)
2 tsp turmeric
1 tbsp chili powder
1 can of unsweetened coconut milk
  • Place the crab in the freezer for 2 hours, or until it stops moving (this is really a humane way of killing them because they just go to sleep ~ especially if you are squeamish about killing them!  Otherwise buy frozen!!)  Remove the legs and crack them with a rolling pin.  Remove the top fo the shell and clean out the insides with your fingers.  Chop the crab and top shells in half.
  • Heat a medium skillet over medium heat.  Add the coriander seeds, cumin seeds, and peppercorns.  Stir constantly until they become fragrant and toasted, approx 3 to 4 minutes.  Cool completely.
  • To make the paste, grind the toasted seeds with a pinch of salt using a mortar and pestle or a spice grinder.  Transfer this dry mixture to a food processor and add the vinegar, coconut flakes, ginger, garlic, chile and onions.  Blend to form a paste.  
  • Heat the oil in a large Dutch oven over low heat.  Add the paste and saute until fragrant and some of the juices evaporate, approx. 5 to 10 minutes.  Add the tomato, curry leaves, turmeric, chili powder, and a pinch of salt and cook until the tomato are tender and melting into the sauce, approx 5 mins.  Add the crab and 1/2 cup water, increase the heat to medium and bring to a boil.  Reduce the heat to low and simmer until the crab pieces are cooked through, approx 10 mins.  Mix in the coconut milk and simmer for 2 to 3 mins to allow flavours to blend.  DO NOT boil the coconut milk as it will split.
  • Place the crab either directly on your kraft paper or on a big platter and dig in!!!

What A Great Guy!!!

I just had to blog about this fantastic meal that my husband Greg made for us while the kids were sleeping over at my in-laws!! 
I was out all day long running around with the kids and didn't manage to get home until 7pm on Monday night ~ and this is what greeted me...

In our last CSA box from Cooper's we received organic lettuce greens and a cucumber.  Lisa had brought over a bag of alfalfa sprouts that they're now growing for the CSA and we had an organic tomato in the fridge.  Greg made this lovely salad with an Asian-inspired dressing and then whipped up some sweet potato and russet potato oven fries, seasoned with Montreal steak spice.  He paired this with a lovely Cooper's steak and made a creamy mustard and peppercorn sauce....and then topped it off by opening a fabulous bottle of 2005 Bourgogne Pinot Noir!!!!! 

Then he took me out to "Moxie's" for dessert and mango martinis!  A perfect night with my guy!

Easy Chicken Noodle Soup

My children have embraced chicken noodle soup with great gusto since the weather has become more autumnal...lucky for them that we have poultry a-plenty due to the fact we belong to the poultry share at "Cooper's CSA Farm & Maze"!!  I roasted one of their delicious free-range, pasture raised, hormone and antibiotic free chickens for dinner one day, stripped the carcass and used the bones for making stock (see below on how to do this!), and used some of the meat for this delicious soup that only takes 30 minutes to create!

CHICKEN NOODLE SOUP
Ingredients:
4 cups water
3 cups homemade chicken broth (or the best low sodium store bought)
1 1/2 cups cubed, cooked chicken
3/4 cup cubed celery
3/4 cup cubed carrots
1 small onion, diced
1 1/2 tsp dried parsley flakes
1/4 tsp black pepper
3 cups uncooked egg noodles (I used wide ones, but the matchstick work beautifully too)

  • In a large pot or Dutch oven, combine the first 8 ingredients.  Bring to a boil.  Reduce heat; cover and simmer for 10 minutes or until vegetables are crisp-tender.  Stir in noodles; cook 5 to 7 minutes longer or until noodles and vegetables are tender.

  • ENJOY!
*If you feel that your soup is not 'chicken-y' enough, you could add 1 tsp of sodium-reduced chicken bouillon granules to the pot, however if you're using a homemade stock the flavour should be just fine!

HOMEMADE POULTRY STOCK
Ingredients:
8 cups water
2 3/4 lbs (1.375 kg) of turkey or chicken carcass, wings, legs
1 rib celery, roughly chopped
1 onion, skin on, roughly chopped
2 cloves garlic, peeled and mashed
1 tsp each of Kosher salt and black peppercorns
2 bay leaves
  • In a large stockpot or Dutch oven, bring water, carcass, celery, onion, garlic, salt, peppercorns, and bay leaves to a boil; reduce heat and simmer until reduced to approximately 6 cups.  This will take about an hour.
  • Strain and skim off foam.
  • Store in an airtight container in the fridge for a week, or freeze in cubes and then store in a ziploc bag in the freezer for a couple of months!
