Aparagus & Tomato Tart With Chevre


For Father's Day I held a brunch at the house and invited my parents as well as Greg's ~ it was a special Father's Day this year as Sunday was also my Father-in-law's 69th Birthday.  With all the incredible fresh produce that we've been receiving in our CSA boxes from Cooper's, I decided to create this tart as I had all the ingredients on hand!

  
ASPARAGUS & TOMATO TART WITH CHEVRE
Ingredients:
1 cup all-purpose flour
1 tsp granulated sugar
1/4 tsp salt
1/3 cup cold unsalted butter, cut into cubes
4 tsp white vinegar
3 eggs
1/2 cup milk
1/2 cup of half and half cream
1/4 tsp each salt and freshly ground black pepper
5 oz log of goat's cheese (chevre)
1/4 cup snipped fresh chives
4 plum or small tomatoes
4 spears of asparagus
  • For the crust, place flour, sugar and salt in a food processor and pulse gently till combined.  Add butter and pulse until coarse crumbs form.  Add vinegar and pulse until mixture begins to form a ball.  Remove dough and gather into a ball.
  • Lightly oil a 9" tart tin with a removable bottom.  Place dough ball in the centre of the pan and using the palm of your hand, press dough from the middle of pan to edges.  With your fingertips, press dough up the sides of the pan until the dough is even with the rim.  The pastry will be very thin.  Refrigerate for 30 mins.
  • Position rack in bottom of oven and preheat to 400F. 
  • In a medium bowl, whisk eggs.  Whisk in milk, cream, salt and pepper.  Crumble goat cheese into a large bowl.  Using the back of a wooden spoon, mash cheese.  Continue mashing while gradually adding egg mixture.  Mixture may be a little lumpy. Add in snipped chives.
  • Quarter tomatoes lengthwise, cut out seeds and core.  Arrange tomato quarters in chilled crust in a circular pattern.  In between tomatoes, add asparagus pieces (trim end and cut into 1 1/2" lengths or smaller)
  • Slowly pour egg mixture over top and swirl gently to evenly distribute chives over tart. 
  • Place tart pan on a baking sheet and bake in oven for 35 to 40 mins, or until the centre of the tart is still a little jiggly.
  • Remove from heat and let stand 15 minutes prior to slicing.
  • Serve warm or room temperature and ENJOY!

Grilled Tomatillo and Jalapeno Salsa

The tomatillos are also plentiful over at the farm and since I made Salsa Verde using them last year, and added them to my tomato sauce to thicken it up, I decided to make a batch of salsa using Cooper's jalapenos, garlic, oregano, tomatoes and tomatillos!

GRILLED TOMATILLO & JALAPENO SALSA

Ingredients

2 lbs tomatillos

4 cups chopped, peeled plum tomatoes

1 1 /2 cups chopped onions

1/2 cup finely chopped and seeded jalapeno peppers

2 tbsp finely chopped garlic

2 tbsp granulated sugar

2 tsp kosher salt (or canning/pickling salt)

1 tsp ground cumin

1 cup white vinegar

2 tbsp chopped fresh oregano (or 2 tsp dried)

  • Peel husks from tomatillos and rinse under running water. Pat dry and broil in oven on a rimmed baking sheet, for approximately 10 minutes (turning halfway through to ensure even charring on all sides of the tomatillos). Remove from oven and let cool. Chop coarsely and measure out 5 cups.
  • Meanwhile, prepare jars, lids in canner, as usual.
  • In a large pot, combine tomatillos, tomatoes, onions, jalapenos, garlic, sugar, salt, cumin and vinegar. Bring to a boil over medium-high heat, stirring often (because it will stick to the bottom otherwise...trust me grrrr!) Reduce heat and boil gently, stirring often, for approximately 45 minutes or until mixture is thickened and salsa can be mounded on the back of a spoon.
  • Stir in oregano.
  • Ladle the hot salsa in to hot jars, leaving 1/2" headspace (adjusting headspace once air bubbles are removed). Wipe rim and centre lid on jar. Screw band down until fingertip tight. Place jars in canner and return to a boil. Process jars for 20 minutes. Turn off heat and remove canner lid. Let jars rest in the canner for 5 minutes before removing to a towel-lined surface. Check lids after 24 hours and reprocess any lids that have not sealed.
  • ENJOY!!!
*As a note ~ my jars are labelled mild because the fresh jalapenos from Cooper's Farm are quite potent and last year my batch of salsa was quite hot! Therefore, I skimped a lot on the jalapenos and the result was more of a mild salsa instead of the desired medium. My next batch will have a little more heat!!!

Sweet Cantaloupe Pickles

The cantaloupes this year are fantastic and we received two per CSA box last week (and since I have a double share, that equals 4!!) As much as we love cantaloupe, I didn't think that we could eat them all in time, so I turned to my trusted "Bernardin Complete Book of Home Preserving Book". This recipe is definitely a keeper and I can foresee us enjoying these sweet pickles either by themselves, over ice cream or with cake!! Just a note, you can prepare these pickles and simply refrigerate them ~ just make sure that you adjust the recipe accordingly to the amount that you feel you will eat in a couple of weeks!

SWEET CANTALOUPE PICKLES
Ingredients
1 cinnamon stick, broken into 4 pieces
2 whole cloves
1 tsp allspice
3 cups white vinegar
2 cups water
13 cups seeded, peeled cantaloupe (I cut mine with a melon baller, but you can also cube the pieces)
4 1/2 cups granulated sugar
  • Tie cinnamon stick pieces, cloves, and allspice into a square of cheesecloth creating a spice bag.
  • In a large stainless steel saucepan, combine vinegar, water and spice bag. Bring to a boil over medium-high heat. Reduce heat and boil gently for 5 minutes. Remove from heat.
  • Add melon to saucepan. Cover and set aside for 30 minutes.
  • Stir sugar into cantaloupe mixture and return to medium-high heat. Bring to a boil, stirring occasionally. Reduce heat and boil gently, stirring occasionally, until melon becomes transparent, about 45 minutes. Discard spice bag.
  • Meanwhile, prepare canner, jars and lids as usual if you intend to preserve the melons.
  • Pack cantaloupe into hot jars within a generous 1/2" of top of jar. Ladle hot syrup into jar and cover cantaloupe, leaving 1 cm (1/2" headspace). Wipe rim. Centre lid on jar and screw band down until resistance is met, then increase to fingertip-tight.
  • Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 20 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.

If you intend to make and refrigerate these pickles for immediate use, ensure that they are eaten within a few weeks of preparation.

Curry Pickled Cauliflower

In our CSA basket we received cauliflower for several weeks and when I looked in my fridge, I noticed that I had 1 large head and 2 smaller ones waiting to be used. Since I wasn't intending to use them this week, I decided to preserve them. In my "Complete Book of Pickling" by Jennifer MacKenzie, I found this recipe which is absolutely delicious! I forsee me using this pickled cauliflower heated up in boiled potatoes for a quick aloo gobi, or in muffaletta sandwiches, on an antipasto tray or in couscous, it is that versatile!

CURRY PICKLED CAULIFLOWER
Ingredients
2 large heads of cauliflower (about 5lbs)
6 cloves garlic, halved
1 tbsp finely chopped gingerroot
1 cup granulated sugar
1 tbsp pickling or canning salt
2 tsp curry powder
1/2 tsp cumin seeds
1/8 tsp ground turmeric
5 cups white vinegar
2 1/4 cups water
  • Prepare canner, jars and lids as usual.
  • Trim off all leaves from heads of cauliflower. Cut cauliflower into 1 1/2" florets, trimming off thick stems. You should have about 18 cups. Set aside.
  • In a large pot, combine garlic, ginger, sugar, salt, curry powder, cumin seeds, turmeric, white vinegar and water. Bring to a boil over medium heat, stirring often until sugar and salt is dissolved. Reduce heat to low, cover, and simmer for 5 minutes until mixture is flavourful. Increase heat to medium-high. Add cauliflower and return to a boil, pressing occasionally to immerse cauliflower in liquid as it softens. Remove from heat.
  • Using a slotted spoon, pack cauliflower into hot jars leaving 1" headspace, and adding 2 pieces of garlic per jar. Pour in hot pickling liquid, leaving 1/2" headspace. Remove air bubbles and adjust headspace as necessary by adding hot pickling liquid.
  • Wipe jar rims and add hot lid disc on jar. Screw band down until fingertip tight.
  • Place jars in canner and return to a boil. Process for 10 minutes. Turn off heat, remove canner lid and let jars stand in water for 5 minutes. Transfer jars to a towel-lined surface and let stand for 24 hours. Check lids and reprocess any jars that aren't sealed.

*If you purchase your cauliflower from a farm that doesn't use pesticides, like I do, make sure that you prepare a salt water bath in the sink to soak the cauliflower and rid it of any creepy-crawlies! 3/4 cup of kosher salt to 16 cups of cold water. Stir the salt into the water and then immerse the cauliflower florets for approx. 30 minutes. Drain and rinse the cauliflower prior to adding to the recipe.
