Toasted Coconut Rice Pudding with Bananas


For Christmas Eve dinner everyone chose my homemade macaroni and cheese with garlic bread for dinner, but I decided to surprise them with a traditional dessert that the whole family loves, but with a tropical twist!  I found this recipe in "Alive" magazine and it is a definite keeper!!

TOASTED COCONUT RICE PUDDING WITH BANANAS
Ingredients:
3/4 cup unsweetened coconut chips (I bought some in the organic section of the grocery store and they were made by "Hippy Snacks")
4 cups unsweetened plain coconut milk beverage (can be found in the refrigerator section at the grocery store - mine is made by "Silk")
1/2 cup arborio rice
1/4 cup short-grain brown rice
2 tbsp maple syrup
1 tsp vanilla extract
1/4 tsp sea salt
1/8 tsp ground allspice
2 bananas sliced, or any tropical fruit of your choosing (mango, pineapple, etc)
  • In a large pot or large high-sided skillet, stirring constantly, bring 3 cups coconut milk, arborio rice, and brown rice to a boil.  Reduce to medium and cook uncovered, stirring often, for 20 minutes.  Reduce to medium-low and cook for 20 minutes longer. 
  • Stir in remaining cup of coconut milk, 1/2 cup coconut chips, maple syrup, vanilla, salt and allspice.  Continue to cook uncovered over medium-low heat, stirring often, for 10 to 20 minutes or until mixture is thickened and rice is tender.
  • Chill pudding for at least 6 hours.
  • Serve garnished with banana slices and remaining coconut.
  • ENJOY!
*If you cannot find coconut chips, unsweetened shredded coconut that has been toasted, is a good substitute.
*If you do not like coconut, substitute the coconut milk with almond milk, and replace the coconut chips with slivered blanched almonds.

Rib Dry Rub and BBQ Sauce


Pork ribs







Friends of ours hold an annual rib cook off where we all compete for first place and bragging rights!  The dry rub and BBQ sauce that we came up with this year only got us 2nd place at the rib cook off, but 1st place at our family table.  They work perfectly for both pork and beef ribs - so if you are a lover of a traditional BBQ sauce flavour with your ribs, this is for you!!!
Beef ribs

RIB DRY RUB & BBQ SAUCE
Ingredients (Dry Rub)
3 tbsp Kosher salt
2 tbsp chili powder
2 tbsp packed, dark brown sugar
1 tbsp smoked paprika
1 tbsp hot paprika
1 tbsp garlic powder
1 tbsp onion salt
2 tsp ground mustard
1tsp black pepper
Ingredients (BBQ Sauce)
3 tsp oil
1 finely diced cooking onion
2 finely diced garlic cloves
1 cup ketchup
1/2 cup apple cider vinegar
1/4 cup maple syrup
1 tsp liquid smoke
1 tsp Worcestershire sauce
1 tsp blackstrap molasses
1/4 tsp salt
1/4 tsp black pepper
2 large racks of beef or pork ribs

  • Pat ribs dry with paper towel.  Flip rack over so back side of the ribs is facing up.  Using a butter knife, gently ease the thin silverskin from the back of the bones.  Using a paper towel, grasp the silverskin and pull off of the bones and discard.  This will ensure your ribs are more tender and cook evenly.
  • Combine all ingredients for the dry rub and rub the back, front and edges of the ribs thoroughly.  Wrap in plastic wrap and refrigerate for 2 to 24 hours (24 hours is recommended)
  • Remove ribs from fridge and bring to room temperature. Tightly wrap ribs in foil and place in a 250F oven on a cookie sheet, for 2 to 3 hours (pork ribs), or 3 to 4 hours (beef ribs).
  • Meanwhile, in a large skillet, heat oil and saute the onions for the sauce over medium low heat until golden brown.  Add garlic and stirring constantly to prevent burning, saute for approximately 5 minutes longer.
  • Add rest of ingredients, combine and simmer for 10 mins.  Let cool slightly and put into a blender.  Puree until smooth.
  • After the ribs have cooked in the oven for the desired amount of time, open the foil and brush ribs all over with the BBQ sauce.
  • Place on a BBQ grill over medium heat, or back into the oven.  As the sauce caramelizes, brush more on and remove from heat.  
  • Let the rack rest for 10 mins before cutting into either one or two bone servings.  
  • Serve with a side dish of the BBQ (in case anyone wants saucier ribs!!)
  • ENJOY!
*I have found that stating the ribs in the oven and finishing on the grill provides not only the best flavour, but fall off the bone ribs!

CHOCOLATE AVOCADO PUDDING

I was having a big-time chocolate pudding craving, but since I can't tolerate dairy, thought I would just have to suppress the craving....until I found this recipe in  Viva Magazine!!!  It is so ridiculously simply (only 4 ingredients?!) and healthy too!!

CHOCOLATE AVOCADO PUDDING
Ingredients:
1 ripe avocado
3 1/2 tbsp cocoa powder
1/3 cup coconut milk
2 tbsp maple syrup
  • Using a blender, combine the avocado, cocoa powder, coconut milk and maple syrup until smooth.  Refrigerate the mixture for 20 minutes.
  • Spoon the pudding into 2 serving bowls and use your favourite topping (shredded coconute, berries, nuts, etc)
  • ENJOY!!!

Apple Cinnamon Muffins

Although India's Naturopath said that she is MUCH better now, we have to slowly reintroduce the previously restricted foods into her diet.  Therefore, I am still creating foods that stick to her diet (and frankly do us all the world of good as they have no dairy, wheat, refined sugar...after all it is only a couple of weeks until we head down to Mexico and have to squeeze our winter bodies into bathing suits!!!)
 I found this recipe in the "Get It Ripe" vegan cookbook by Jae Steele and all of the family LOVED them!!!

APPLE CINNAMON MUFFINS
Ingredients:
2 cups spelt flour (or 1 brown rice & 1 quinoa like I used!)
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp sea salt
1 medium apple, peeled & diced
1 cup unsweetened applesauce
3/4 cup raisins
1/3 cup non-dairy milk (I used unsweetened vanilla almond milk)
1/3 cup pure maple syrup
3 tbsp EVOO (or sunflower oil)
1 tbsp apple cider vinegar
  • Preheat oven to 375F.  Prepare a 12 cup muffin tray with paper liners or a light coating of oil (I have silicone muffin trays so I didn't do either!)
  • Whisk together the flour, baking soda, cinnamon and salt in a large bowl.  In a smaller bowl combine the raisins, apples, applesauce, milk, syrup, oil and vinegar (this will help rehydrate your raisins a little so they aren't so chewy)
  • Add the liquids to the flour mixture and gently stir with a wooden spoon or silicone spatula until just combined.*
  • Portion the batter into the muffin cups and bake for 20 to 22 minutes until the tops are golden brown and domed and a toothpick inserted into the centre comes out clean.
  • ENJOY!! 
*Ensure that you stir your batter gently as over-mixing can cause gluten to develop in the batter and your muffins won't rise as well.  Spelt has gluten but the amount is so minor that your body can process it much easier than if it were wheat flour!
**Make sure you remove the muffins from the tray 5 minutes after they've been removed from the oven - this will ensure that humidity doesn't build up in the bases of your muffins and cause them to become 'gluey'.
***You can also add flax or poppy seeds or chopped almonds or walnuts to the batter as well!!!

French Toast with Caramelized Bananas & Pecans

Although I am not a huge fan of French toast, my family definitely is and we had our friends Dave, Siobhan, and their kids staying over for Thanksgiving...so I chose this recipe from Canadian Living because it looked delicious and would feed a crowd at breakfast ~ we paired it with bacon and sausages and it was fantastic!!!

FRENCH TOAST WITH CARAMELIZED BANANAS & PECANS
Ingredients:
1/3 cup chopped pecans
6 eggs
1 1/2 cups 5% cream or milk
 2 tbsp pure maple syrup
1 tsp ground cinnamon
1 tsp pure vanilla extract
1/4 tsp salt
1 loaf of egg bread
2 tbsp butter
Bananas:
2 tbsp butter
6 firm peeled bananas, halved crosswise and lengthwise
1 cup pure maple syrup
1/2 cup packed brown sugar
  • On a baking sheet, toast pecans in 325F oven for approx. 6 mins.  Set aside.
  • In a large bowl, whisk together eggs, cream, maple syrup, cinnamon, vanilla, and salt.  Cut egg bread into 3/4" thick slices; dip into egg mixture until soaked.
  • In a large skillet, melt 1 tbsp butter over medium heat and cook the slices, in batches and adding more butter as needed, until golden, approx. 3 minutes.  Transfer to 2 rimmed cookie sheets.  Bake in the oven at 350F until puffed and heated through, approx. 8 mins. Place in a large 9" x 13" casserole dish, and set aside.
  • Caramelized Bananas:  Meanwhile, in a large nonstick skillet, melt half of the butter over medium high heat.  Fry half of the bananas, turning once, until golden and tender, approx. 3 mins.  Transfer to a plate and repeat with remaining bananas.
  • In the same skillet, bring maple syrup and brown sugar to a boil over medium-high heat; reduce heat and simmer for 2 mins.  Stir in bananas; simmer for 1 minute.
  • Spoon over the French toast and sprinkle with the pecans.
  • ENJOY!!

Maple Strawberry Smooch!

The strawberries grown at "Cooper's CSA Farm & Maze" are awesome and plentiful this year! As soon as they opened up their fields to u-pickers, the kids, some of our friends and I were over there filling our baskets!! Since I still have PLENTY of jam from last year, as well as Peppery Strawberry Salsa, I turned to my Bernardin book to see what else can be done with these luscious berries....and NOTHING sounded more decadent than this simple recipe for a dessert sauce ~ I can already taste it drizzled over ice cream, cheesecake, or in my morning oatmeal!!!

MAPLE STRAWBERRY SMOOCH
Ingredients
4 3/4 cups pureed strawberries (for this you'll need 8 cups of whole fruit and food processor to really make the berries smooth)
1 1/2 cups pure maple syrup
1 cup unsweetened apple juice
3 tbsp lemon juice
1 package of regular powdered fruit pectin (I used the 57g Certo brand)
  • Prepare your canner, lids and jars as usual.
  • In a large stainless steel saucepan, combine pureed strawberries, maple syrup, apple and lemon juices. Bring to a boil over medium-high heat, stirring frequently. Add the pectin, stirring constantly until dissolved. Bring to a full rolling boil and boil hard for 1 minute. Remove from heat.
  • Ladle hot smooch inot hot jars, leaving a 1/4" headspace. Remove air bubbles and adjust headspace. Wipe rim. Centre lid on jar and screw band down till fingertip tight.
  • Place jars in a canner, ensuring that they are completely covered with water. Bring to a boil and process for 10 minutes. Remove canner lid and wait 5 minutes before removing jars. Cool and store.

Steel Cut Oatmeal

As I mentioned in an earlier post (Quinoa & Chickpea Soup), I am following a "Booty Camp Fitness" challenge. Funnily enough the elimination of dairy from my diet has been relatively easy, but refined sugar is more challenging because it is included (in a variety of forms) in almost all foods! Although I thoroughly enjoy eggs and sprouted grains toast with nut butter and honey, I decided to create something different for breakfast. As I was cooking the oatmeal, it occurred to me that perhaps many do not know the difference between the regular instant oatmeal and steel cut (or pinhead/Irish) oats.
Steel cut (or pinhead / Irish) oats are essentially instant oats prior to processing.Steel-cut oats are whole grain groats (the inner portion of the oat kernel) which have been cut into only two or three pieces by steel. These take longer to prepare than instant or rolled oats due to their minimal processing. Generally between 15-30 minutes to simmer (much less if pre-soaked). The taste and texture of the cooked product is what differs between these two forms of oatmeal - steel cut have a firmer and nuttier flavour.

Oat kernels can look very much like wheat berries in their raw state, but because the oat kernel is soft, the nutritious bran is not removed during processing and it takes much less time to cook (huge bonus in my books!!) Whole grain oats contain seven B vitamins, vitamin E, and nine minerals, including iron and calcium. The quality and quantity of the protein in oats is far superior to that of wheat and most other grains. One ounce of oats has TWICE the protein of wheat or corn flakes. But the most important nutritional advantages are the soluable fiber and the GLA (gamma linoleic acid); the soluable fiber is what gives it the gummy texture, and it helps lower cholesterol levels in the blood.

I like to cook mine and then add cinnamon (since it is delicious, helps regulate blood-sugar levels as well as battle against harmful yeasts in the body), a tbsp of maple syrup (since it is DELICIOUS, I get it from a farm down the road and has health benefits since it has high levels of zinc and manganese), and a handful of fresh blueberries (which help sweeten the oats as well as provide health benefits for almost all facets of the body's functioning). You should try this simple and nutritious cereal for breakfast or a snack - you'll be glad you did!

STEEL CUT OATMEAL
Ingredients:
3 cups water
1/4 tsp sea or kosher salt
1 cup steel cut oats
1 tbsp pure maple syrup
1/2 cup fresh blueberries
1 tbsp ground cinnamon
  • Bring the 3 cups of water seasoned with salt to a boil. Reduce heat to a simmer and stir in the oats. Cover and simmer 10-20 mins (depending on how chewy you like your oats!), stirring occasionally to prevent sticking.
  • Once all the liquid is absorbed, remove from heat and add maple syrup and cinnamon. Stir well to incorporate evenly throughout the oats. Fold in the blueberries and ENJOY!

Maple Tree Cake

Another one of my 'experiments' that turned out really well! I decided to make this cake for Saturday's dinner with Dave, Siobhan and the kids - it was relatively easy except for the fact that my cake pans were too large so I ran out of icing and had to press Skor pieces around the edge! A perfect fall cake as it has the woody and sweet flavour of maple syrup as well as dried fruits on top!
MAPLE TREE CAKE
Ingredients:
4 eggs
2 cups sugar
2 cups sour cream
2 tsp maple flavouring
2 1/2 cups all-purpose flour
2 tsp baking soda
Dash of salt
1/2 cup chopped pecans
FROSTING:
1/4 cup butter, softened
3 cups confectioners' sugar
1/2 cup plus 1 tbsp pure maple syrup
1/4 cup semisweet chocolate chips
1/4 cup peanut butter chips (could just as easily use butterscotch)
2 tbsp dried cranberries
2 tbsp golden raisins
2 tbsp chopped dried apricots
2 tbsp chopped dried apples
  • In a large bowl, beat the eggs and sugar. Add sour cream and maple flavouring. Combine the flour, baking soda, and salt; add to sour cream mixture and mix well. Fold in pecans.
  • Pour into 2 greased and floured 9" round baking pans. Bake at 350F for 30 minutes, or until toothpick inserted near the centre comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks to cool completely.
  • For frosting, in a bowl, cream butter and confectioners' sugar. Add syrup and mix well. Spread between layers and over top and sides of cake.
  • In a microwave safe bowl, melt chocolate and peanut butter chips; stir until smooth. Transfer to a pastry or a heavy-duty reusable plastic bag; cut a small hole in the corner of the bag. Pipe a tree and branches on top of cake. Combine dried fruits and sprinkle around tree base and at ends of branches to resemble fall leaves.
  • Serve & ENJOY!
